(New York Daily News)   It has come to this: Brooklyn hipsters ruining noodle soup by making it psychedelic, trippy, and proudly ironic. "The menu is Asian fusion gone haywire: Doritos and Spam find their way into kimchee and sauteed Chinese broccoli"   (nydailynews.com) divider line 7
More: Stupid, Bushwick, noodle soup, acid trips, disco balls, Doritos

The My Little Pony Killer: Hey now, don't knock Spam and kimchi until you've tried it.

/Hawaiian-Korean fusion FTW!

This. Woo, hipsters in Brooklyn can now get food that no one in Hawaii would blink an eye at.

So it's multiculturalism and diversity at a national level, but when a restaurant does it they're committing a heinous travesty of food anti-purism? It's a melting pot, why not make that literal?

// and I could totally see putting a matza ball in there

Kosher-Vietnamese fusion?  I'd give that a try.

Running start:
1. Pho with knaidlach
2. Rice paper blintzes
3. Cel-Ray bubble tea
4. Corned beef & kimchi on rye (use kimchi to replace slaw or sauerkraut in any deli sandwich, really)
5. Bagels with lox and fish paste/sauce

Hope you don't mind me adding numbers to your list.
I feel that 1 is probably too much starch, and might be too bland besides.  2 might not work because I think rice paper is even more delicate than phyllo dough, and even if it did, it doesn't add much. 3 and 4 are genius.  5 could be great, could be terrible, entirely depends on the type of sauce used.  The sauce might just completely overwhelm the taste of the lox, and that would be a shame.

My suggestion: mapo tofu, but with paneer instead of tofu.  I'd be curious how that turns out.  Also having trouble deciding whether to leave in the meat or to make it more Indian (i.e. vegetarian).

An Indian place near me does a paneer curry that's basically chunks of paneer in a spicey broth, I could see that being similar to what you're describing, just with more Chinese spices instead of Indian.

For #2 - instead of rice-paper blintzes, how about blintzes filled with spring roll filling?
