justadadX3: One of my favorites (if it is ham) - is BBQ - just dump a big bottle of BBQ sauce into a crock pot w/ the ham(separate the slices) and put it on low when you leave in the morning - when you get home stir it up and serve.

If it is beef or turkey - open face sandwiches in gravy works.

For other stuff (like salami) - I have no idea.  But my bride of 25 years (as of Tuesday) makes me a dozen or so sandwiches at a time and freezes them - I pack those for lunch the night before - and they are good to go by lunchtime the next day - so you could do that.

I'd like to do this for the monsters for school lunches, but what condiments will freeze (and then thaw) okay? Pretty sure mayo's out; what about Miracle Whip? Yellow mustard? Butter? (Don't laugh, I'm serious.)

Butter will freeze well. So will mustard and ketchup. Mayo and miracle whip will separate. If it's a fat/water emulsion that is easily spreadable at refrigerated temperatures, freeze-thaw will separate it. That's why butter and margarine won't separate on freeze-thaw--they're made of/with "harder" fats and with enough fat-to-water (but some of the "spreadable" versions will separate on freeze-thaw).

Chop it and make "ham salad" adding your fav ingredients.
