I rediscovered pizza, there. I realized that the quality of the pizza was in the quality of its ingredients, and that you did not have to put all kinds of greasy stuff on it to make it good. The less the better actually. In the hands of a good pizzaïolo, a margherity, four-season or Napoletana is legend.
