I make a caprese pasta salad with grape tomatoes, fresh mozzarella, fresh basil and balsamic vinegar that's pretty good.

I do up a pretty good veggie pasta salad... I sautee some sweet onions, a couple colors of bell pepper, and a whole bunch of zucchini in olive oil. Last couple minutes add a couple minced garlic cloves and some lemon juice.

Cook and drain pasta, mix with all the veggies, and toss with the olive oil, garlic and lemon, and add some lemon zest. Easy, light, and tasty.

Quinoa summer salads are pretty awesome.  Just make some quinoa, squeeze a little lemon and lime juice into it with salt and pepper, then toss in the freshest vegetables you can find at your local market.  We did tomatoes and cucumbers, onions, peppers, corn, and some herbs.  Break up some queso fresco into it and a little drizzle of olive oil.

Summer Kale salad with orange segments, sliced strawberries, walnuts and a vinaigrette kicks all kinds of ass.

And even though it's kind of cliche, few things can beat a caprese salad with really good quality mozzarella, ripe tomatoes, basil, and balsamic vinegar.

Also, chicken salad made with roasted chicken breast, a little mayo, curry powder, diced apple.

Thick cut cucumber (skin on or off) tomato, red onion, red and green pepper, a drizzle of extra virgin olive oil and fresh cracked pepper to finish. And of course, Feta cheese.

Ido most salads with fresh spinach leaves. You can make a pretty good Greek salad that way.


But, onto what people really want:


Ingredients
4 cups French bread cut into 1-inch cubes and dried overnight
6 slices bacon, cooked, chopped, drippings reserved
2 cups halved grape tomatoes
2 tablespoons oil, for searing
2 cups halved yellow pear tomatoes or roughly chopped heirloom tomatoes
2 cups chopped spinach
Vinaigrette:
1/4 cup red wine vinegar
1/4 teaspoon salt
1/4 teaspoon pepper
3 tablespoons olive oil
1 tablespoon chiffonade mint
1 tablespoon chiffonade basil
Directions
Toss bread cubes in the bacon drippings. Sear the halved grape tomatoes in 2 tablespoons of oil, cut side down, until caramelized about 5 minutes, set aside.

Combine red wine vinegar, salt and pepper in a bowl, slowly whisk in olive oil in a thin stream until emulsified.

Combine all tomatoes, bread, bacon, and spinach and dress with vinaigrette, toss well, garnish with mint and basil and serve.

Char 6 ears of corn on the cob. Char and chop up a jalapeno. Add a diced avocado, a quarter-cup of diced red onion, 2 chopped scallions, juice from one lime and 2-3 tbsp olive oil.

Sounds good to me.

My other go to summer salad is:

Black beans
Corn
Red pepper
Green pepper
Red onion
Carrot

With a nice Italian dressing.

OK, my recipe.  Sweet corn, sliced grape tomatoes, black beans (rinsed), cilantro or parsley (I prefer parsley), diced avocado, lime juice, olive oil, ground sea salt, fresh ground pepper.  If you like jalepenos, add 'em.  Serve chilled.

So frikkin delicious it's unreal. I eat this stuff as a meal.

For those of you too lazy to click the link, the ingredients are as follows:

Roasted eggplant and zucchini (optional)

Barley, cooked with chicken broth and seasoned with cumin, coriander, and cayenne

Lemon Juice + Olive Oil (seasoned with salt, pepper, and sugar and whisked to make a dressing)

Garlic

Cherry tomatoes

Scallions

Kalamata olives

Red Onion

Flat leaf parsely

Mint


Mix it all together and whaddya get??  Mouth happy.  That's what.

I like a corn salad. I boil up a few earns of corn, scrape it off the cob, mix in some chopped red onion, cilantro, and feta cheese. Very simple, very tasty, and if you add the add the feta while the corn is still warm it just melts a little bit to make it even better.

It's odd, sometimes dill just really makes me gag (kohlrabi pie, NEVER AGAIN, blech), but sometimes it's freakin' awesome, like in pickles or potato salad.

I know. I hate dill except in pickles. I found that out by taking a big bite of dill dip and nearly gagging at a party...in front of the person who brought it. Oops. Lol

Sounds pretty similar to our family recipe... try adding some chopped up apples sometime.  Adds a little delicious sweetness and crunch.

Blanched asparagus cut into 1" pieces
halved cherry tomatoes
minced red onion
Vinagrette -- balsamic or italian

This is the recipe I generally go off of  http://www.food.com/recipe/marinated-balsamic-bean-salad-115518

But I substitute cucumber for green beans and usually skip the kidney beans all together. Also, I use more vinegar, mustard, olive oil, and garlic for a stronger flavor--like 1.5 of what the recipe calls for. It's good with scoop tortilla chips. Nom.

I made a salad once with chopped up chunks of mango and firm avocado and I poured olive oil, honey mustard, brown sugar, cracked black pepper, sea salt, and lime juice with it. But I never kept track of the measurements and never bought that much avocado again.

Chicken Couscous Salad

2 Cups Water
1 1/2 Cups Couscous, uncooked (I prefer Israeli couscous)

1/2 Cup Orange Juice Concentrate, thawed
1/3 Cup Lemon Juice
2 Tablespoons Water
2 Tablespoons Olive Oil
2 Teaspoons Ground Cumin
1/4 Teaspoon Black Pepper

3 Cups Chicken, cubed & cooked

2 Cups Cucumber, chopped & peeled
1 Cup Red Pepper, chopped
1/4 Cup Green Onions, sliced
1/2 Cup Fresh Cilantro

Bring water to a boil in a medium pan. Gradually stir in couscous. Remove from heat, cover and let stand 5 minutes. (or follow package directions if using Israeli couscous) Fluff with fork.

Combine orange juice and next 5 ingredients. Stir well. Add to couscous mixture. Add chicken and the remaining ingredients. Toss well. Serve.

I'm trying to find my mother's recipe of grapefruit, avocado, black olives, red onions w/ italian dressing salad.
I hated it as a kid but I love it now. I may just have to play with proportions until I get it right.

When I was at Penn State, the salad bar in the in the dining halls were stocked with the imitation crab meat as well as the usual salad bar fare like chick peas and shredded cheese and bacon bits and ranch dressing.  Some people would make salads using the imitation crab meat instead of lettuce.

/and by "some people" I mean me
