Gawd, so much THIS!! A Five Guys opened in the next town over from me, and after a month or two, I decided to try them. Overpriced burgers that were average at best, and overcooked fries. Maybe I went there on a bad day, but I haven't been back. I can spend over $10 elsewhere and get better food.

You are going to be so disappointed in Sonic.  I guess thats a bit harsh...they aren't bad and their burgers are pretty good.  Where they excel at are drinks and their onion rings.  Best ever.

Tio_Holtzmann: That is interesting. We have a bar here in Urbana (Murphy's, any UIUC grad knows it) and they cut all the fries fresh, AFAIK. They have a ton of fresh potatoes on hand and the fries still have the skin when you get them. They just have the can crusher style press, put a potato in and pull the handle and bam, fresh cut fries. Their fries are always crispy and fantastic and I can't see a bar operation taking a second step in making fries. So my two questions are 1) how long does that additional step take and 2) is the crispiness also affected by how slender the fry is, ie, the surface area to volume ratio? Genuine curiosity.

Bacon mega, please. And for all the kids who don't remember when they were just Murphys before expanding into the old bw3, get the hell off my lawn.


Blanching takes about 2 min, then let cool for at least 10-15 minutes

Crispness derives from a few factors...yes, surface area to overall mass of said fry is a component to it.  Other factors include:

- Type of potato used.  Some are starchier than others...which leads to the next factor...
- Soaking and rising.  (Again, depending on the type of potato) Going from cutter to fryer typically produces a browner fry because of the starches being burnt and caramelized in the cooking process, which is why, generally...you will encounter limper and less crispy brown fries.  Golden yellow and crispy have at a minimum been rinsed off and drip dried a bit before they enter the frier.  At a restaurant I used to work at, we would peel, slice, soak over night, rinse, drip dry, then fry.  They were golden, crispy and delish.

Haven't had In-and-Out. Would like to try next time I'm out West.

I will say that Shake Shack is vastly superior to Five Guys. I love Shake Shack. It's worth the long lines.

Dude, I eat there ALL THE TIME (they have a locaton here in Vegas). Amazing burgers, brats, steaks, and pork chops. The owner's an asshole, but the food is good.

I tried a In-N-Out meal and I found they are on par with McDonalds for quality.  Thin patties and cheap buns.  The fries are the cheap shoe string variety that comes from Sysco.  Worse is that I go and try to order a burger with bacon.  "We don't serve bacon."  NO BACON?!  WHAT IS WRONG WITH YOU?!  After being told this place was on par with Five Guys and finding it was a dumbed down McDonalds I question the accuracy of the people telling me this.

There's a little place here called Burger Bungalow in Vancouver, WA. They serve homemade potato chips with their burgers and use a specific Oregon ranch as their source of their meat. They have a spicy burger and chip combo called Shut Yo Mouth. Most delicious burger I've ever had.

/Lived on both coasts.

Omg, thank goodness I'm not the only one who hates their fries. I will go out of my way to go get Carl's Jr. fries because the In N Out ones are so horrible. Unfortunately, I am the only person in my group of friends who is of this opinion, so I have to keep my mouth shut when we do lunches together.

However, I will have to try this. I love animal-style, so this is right up my alley. Though, swap the "spread" for gravy, and you've got poutine. I should write them a letter.


Dishes I once assumed that everyone had heard of, but are but are apparently regional to Canada or Atlantic Canada:
- Poutine
- Donair
- Garlic Fingers
- Rappie Pie
I can't imagine what crazy names American restaurants might come up with for these other Canadian staples!

Donairs are only regional if you call them donairs. In the States, it's gyros or doners or something like that. No one has heard of poutine though. And they get that confused dog look if you ask them about perogies.

The In N Out closest will not do Monkey Style (I just asked last night). *shrug* No worries. I got two others in the area to try. :)

Primanti's  isn't the only place in the US that puts fries in the sandwich (probably the best though).  But this isn't just fries, it's animal style fries which is a wonderful thing and the only way the in-n-out's fries are edible to begin with.  I will definitely be trying this.

The secret to the Fries is that they don't blanch their fries. Which is why they have that lifeless, soggy, sort of sullen texture.

Fries, to become crisp and lovely, need to get that moisture out of that 'tater. Which is why most places blach the fries first. Not in water, but in oil. It forces some of that pesky water out, and when allowed to cool--as the fries will continue to steam--you then drop the bastiches in 350 degree oil, and you get crispness.

Straight from the cutter and into oil, you are getting a sodden mess. Which is why I pass on the suckers.


This.  One of the "secrets" to why McDonald's fries are so good is the par-cooking in oil once before freezing.  It drives out moisture and plays games with the cellular structure and starch content and other science-y things.  Try it at home sometimes, and yep, you really can tell the difference.

I look at In N Out much the same way I look at U2.  It's not that they SUCK, it's that they're so ridiculously slavishly overrated, it triggers an avoidance reflex in me.

And their fries are utterly useless once they get to room temperature.  And they have 7 Up instead of Sprite.

I agree they are overrated.  For a chain they are very good.  Stacked against a burger from a decent diner - they're just meh.

The thing with In-n-Out is my California relatives and friendswon't shuddup about it and in fact there are far better burgers to be had at other chains - but they don't have celebrities yapping about it on nat'l television.

Omg, thank goodness I'm not the only one who hates their fries. I will go out of my way to go get Carl's Jr. fries because the In N Out ones are so horrible. I'm definitely very familiar with poutine, and most everyone I know is as well. Had some last week as a matter of fact! Donair I had never heard of by that name, but I consume donairs mother and father-in-law, shawarma and gyro, respectively, probably weekly. The Canadian twist seems pretty tasty though.

Never heard of garlic fingers, again, by name, but my buddy has been making those for years, simply calling them breadsticks. And they are damn delicious. No farking thanks on the rappie pie though.

This. Was the suggestion that In-N-Out's fries actually come from Sysco? They definitely do not - the fries were a whole potato 5 minutes before they went in the fryer.

I know there's a lot of belief that In-N-Out is overhyped, but hype only goes so far. Show me any other fast food place with lines out the door at 11pm on a Tuesday.

I like In-N-Out's fries, better than McDimwits or Booger Thing or ARRRRRRRby's and most definitely Scammics. Why? Because they taste like potatoes, not some mashed up overflavored with meat drippings and seasoning and MSG and who knows what the hell else. You can even watch them slice the real potatoes into real fries right there in the restaurant. Does McDimwits do this? Does any other national fast food chain? Everything comes in mysterious brown sacks in huge trucks... I'd rather have my fries wrapped in brown potato skins than paper.

Fresh (never frozen) potatoes, oil, salt, done. I'm happy.

Farking exactly. The whole "secret menu" thing is just...generally not true. Sure, some places will still make items no longer on the menu if you ask, but if its never been on the menu, its not likely to be known outside of a particular region.
