Thinking of (gulp) making homemade mac'n'cheese for my toddler. I want it reduced fat.  Start with rue of equal parts flour and butter.  For the sauce should I go evaporated milk, not sweetened condensed stuff, for a rich, creamy sauce or 1% milk?  Add a bag of 2% shredded cheese.  Equal parts cheese to milk?  Also low salt.  I don't want to add any salt to it, should I add other herbs/spices?  Also can I sneak any veggies into it?

Would it be better to make fried mac'n'cheese patties by scooping, dipping in 1% milk and bread crumbs, saute-ing, freezing and reheating or making the sauce and fridging/freezing the sauce and making small batches of macaroni to add the sauce to?



You could add some mashed squash (I get the frozen box kind) for a great nutrition addition.  I add a little bit of chopped fresh rosemary to mine.  You could also use a whole grain pasta.  The cheese does have some salt in it.  I also add diced up cooked chicken to make it a one dish meal.  Let us know how it turns out!

I too, hate when that happens. Or when a store purchase totals that amount.

A friend of mine and I stopped in at a 7-11 down in SoCal and the register rang up to that amount. The cashier quickly added a penny. Nuh-uh! I IZ POOR! It took me a long time back then to find enough change to buy stuffs from a 7-11. I told her to take the penny off and if it bothered her that much, take another penny off. We actually argued about it for a while before my friend dragged me out yelling "I'm not listening to you fight over a penny when I wanted to go to the taqueria anyway!"

I'm superstitious about some things, but that's not one of them. If for some odd reason I'm ever in a kitchen with you and you drop something and I yell "Watch out!", I'm warning your house Nissen so they don't get hurt and then do bad things to you like tie your cows' tails together or make your milk curdle. You gotta be mindful of those things, you know! Still, feel free to giggle at me.


I had this happen at McD a few years ago.  I was so startled I didn't say anything to the woman who took the payment.  When I got to the window I just asked to speak to the manager, yes still at the drive through.  I told him what happened and told him that I wanted my penny, which I of course I received.  It felt a little weird, but it was my penny damnit!  It was the principle of the thing. :D


Yup. Besides, I don't shun people for breaking a New Year's Resolution (though, being a Heathen, I could. Oath breaking is serious business to us), so don't expect me to fear a number from an entirely different cultural faith system that, according to even older translations, isn't even the right number (it's actually 616). It's just a horror movie/metal head thing now. Or at least should be, but I guess some people don't keep up with the academic side of things.

I'd partially cook them first if they were hard veggies. Something softer, you can put in raw to keep it from turning to mush. So carrots - definitely steam them to al dente (or just before) first. Something like zucchini, I'd do that raw. Meats, definitely should be cooked first (unless, of course, it's a meat that can be eaten 'as is', such as prosciutto or salami).

Timid Goddess:  I forgot to mention that I put a mixture of seasoned breadcrumbs and parmesan cheese on top & broil it for a brief time before it is served.  I make my own bread & dry the heels and save them up in a bag in the freezer to make the breadcrumbs.

LOL! There's been a young skunk trying to defend the water dish from Little Moo Kitty very early every morning. Lessee... full of delishus waters, has tiny kitties on the side - Iz fur MEEEEE!

Our local skunks are not too keen on the concept of "sharing", I guess.

We're re-organizing the house and there are a million things half-done. It's driving me crazy! So, I'm going to the gym and then to a friend's house so I don't have to look at the partially done projects or hear the lawn mocking me. BBL!

Brian Blessed's Bastard Boy: And here we begin with the Dawwww moments.  The kittehs will now be five weeks old tomorrow, and they are just all over the place now that they have graduated to the living room.  The wife's red couch is now ground zero for them for some reason, but things are going well with all of them.  Uncle Piggy for some reason seems a little scared of them, and Uncle Mo stays far away.  Aunt Fatty Waffles is another one who has nothing to do with them, but momma Scampi is doing a great job with all of them, especially during feeding throw down when Sashimi Fettucini and Moo Shu Tiramisu decide to start a fight over who goes where.  So to start with, here's Sashimi and me after I thought I'd take a nap for a while, but was rudely interrupted.

My parents were from the New England area... they have Hubbard Squash there, which gets mashed..  after moving to Virginia, Dad would have some squash shipped down to us and Mom would do the cooking... little salt and butter on it... nectar of the Gods...

We are having very unusual weather here.  It's in the 70s.  I'll SO take it.  Last year at this time, it was 105.

Real Women Drink Akvavit: konekosama: just had elbows pasta last night but would totally make mac n cheese tonight if i were less lazy

One of the most interesting and strangely tasty leftover elbow pasta uses I've seen was a friend who decided to clean out her refrigerator, diced everything that didn't smell funky, threw it in with the pasta and stirred it together with some sort of salad dressing (I think she just combined a couple types). She called it "pasta salad" and the same people who wouldn't eat the leftovers the previous few days chowed that Frankenpasta Salad down without complaint.



I have friends who do that with their scramble eggs in the morning.  Anything left over from the night before gets chopped up along with some onion & grated cheddar cheese and of course a splash of chili sauce to warm it up nicely.  Yum!

Forced pictures sometimes don't turn out well, but still think these are pretty good.  As you can see in the first one, Pirogi just doesn't really care too much to be disturbed by the babies, but in the second one, he was a little more relaxed.  Might have something to do with Pu Pu being female and Moo Shu being male, but not really sure.
