Because we use Samuel Johnson's dictionary (published 1755) as our basis for spelling, whereas you use Noah Webster's (published 1828), which was specifically written for American use to represent the USA's independence, cultural as well as political, from the British Empire. You wouldn't want us to mess that up, now would you?

Yeah I actually figured it was us being different, as usual. One correction though, Webster was a proponent of language reform, claiming that words should be spelled like they sound. (organise became organize, ect). He also wanted to break away from antiquated Latin pre/suffixes in exchange for spellings closer to sounds (colour become color). The UK had/has every opportunity to embrace these reforms.
