Why the hell would you be "disgusted with yourself"?   I hate this kind of self-loathing rhetoric about food. Every one of my co-workers talks endlessly about food guilt, and feeling "naughty" about eating dessert, and how they've been good by eating salad for lunch, so she's "allowed" to have the brownie.

Stop it. It's not healthy. Eat a small portion, enjoy it, and move on with your life.

Next time you want some egg with your avocado, just scoop out a bit of each half to make room for pouring some scrambled egg inside, put both halves on a muffin pan, then throw in an oven. When it's finished, you can eat it out of the skin with a spoon, or smear it on a warmed tortilla.

Honestly, that just sounds disgusting.

Eggs and avocados are great, and there are great foods to go with them, but for me, the combination is not great.

Yeah but if you're eating two whole avocados, there's hardly a need to worry about the calories in them because they are full of fiber and good fats and you'll feel full for hours. And in fact frying them, while it might be terrible, is also not the worst thing you could eat.

The reason people overeat is not because of the fried fat (although any salt and bread on it would definitely play a role and bad fats = bad fats). Empty carbs are most of the problem, because they make people hungry and they don't make you feel full, so you eat more. I'd say the majority of weight loss is dropping sugar salt and bad fats from the diet. Throw in empty carbs and you're pretty much there.

They have lots of fiber and they are high in monounsaturated fats. They are good for you. They also have more potassium than a banana. Just don't eat them all the time every day unless you're planning on going on some sort of low carb diet for weight loss.

There are tons of worse things you could eat than an avocado.

Fat and protein is better for you than sugar and carbs, and that one avocado is likely to carry you well into the lunch hours.  We've over-demonized fat in favor of chasing some sort of insane shiatty chemical low-fat dream.  Some fat in your diet is better than good - it's farking necessary.  Fats from meat, fishes, and rich veggies like this one are the actual cocaine your body wants.

But no, you shouldn't be smearing yourself in the meat of a dozen fried avocados and stand in the street screaming for Betty White to come lick you, either.

sriracha is good stuff, but its flavor profile limits it to certain applications.  for example, asian stuff, and those days with a hangover where you feel like eating horrible things with sriracha.

/ used it last night on these bahn mi type sandwiches i've been making with leftover porks, bacons, and pickled vegetables.  since cilantro was a big part of the flavors, sriracha belonged.

I tend to just half it in the skin, dig a little more of a depression out after removing the stone, sprinkle salt & pepper in then crack an egg into each half, and bake them.
Makes a good breakfast.

This. Avocado is awesome for you. I race bikes, and went through a weight loss cycle when my power started to plateau one year, as I didn't know where else to find speed on the bike. I eliminated one sandwich per day, and one sleeve of Oreos per day, and added one avocado to replace them. The rest of the time, I just stayed a little hungry. Worked out great (12 lbs in 5 wks), cat 2 upgrade followed shortly after that.

 But no, you shouldn't be smearing yourself in the meat of a dozen fried avocados and stand in the street screaming for Betty White to come lick you, either.

Damn.

It's summer in Texas. I'm not going to remember this recipe in the fall when I turn my oven on again.  No way in hell I'm turning my oven up to 450 when it's 100 outside.

Hmm, maybe if I can pan fry it... Or maybe grill on foil.
