The photos look gorgeous, but I would think in reality the temperature would never be right. To keep the ice cream solid, the donut would be too cold, and vice versa. I'll stick with a donut and a cup of coffee, thanks.

Well, technically you could modify this a little bit to fit you low-carb diet.

- Make a cheese-cake type doughnut instead of flour (no sugar of course, or add no-carb sweetener)
- Make sugar-free ice-cream
- Get unsweetened chocolate (or 90%)

It will have fat and diary but will be low-carb.

Full fat yogurt mixed with tuna with peach slices sounds wonderful.

Though, the low-fat, HFCS super-sweet yogurt cups with peach flavorings sounds yucky.

they said the same thing about putting ice cream between two chocolate chip cookies and look how well that turned out. 

I wonder if they could inject ice cream into a doughnut like they do jelly or cream filling

They had me right until they said coffee ice cream.  I'm one of the few people in Seattle that can't stand coffee.  Don't like the smell or taste of it.  Now, if you put chocolate ice cream in there, I'd be tempted.

It could be done, but it would take more stages than the original recipe. Here is how I would do it:

partition out and shape ice cream patties and return to freezer (between wax paper). Refreeze, preferably overnight.
The next day, melt chocolate and cut donuts.
Assemble ice cream between donut halves and dip.  The trick to success is to NOT put the donut and ice cream in the freezer together. Instead, prepare the ice cream and re-freeze it completely. Then you have time to properly assemble and dip.
