Take your potato, poke holes in all sides,
roll in a mix of olive oil and sea salt to get a LIGHT coating
bake in a preheated oven at 400 degrees for 25 minutes (lay the potato on the rack itself and not a pan or dish, although ya might want to place a pan below the rack to catch any drips)
at the end of 25 minutes flip the potato then bake for a further 25 minutes
while the potato bakes sautee finely chopped onions and fresh garlic to taste make sure you use extra butter
when the potato is done place it on a cooking platter, cut it longways, pour in the onion butter mix, top with shredded cheese and place back in oven until the cheese melts and just begins to brown.
remove from oven, top with chives, bacon bits and sour cream to taste

And prepared properly, a potato will provide your entire daily requirement of sour cream and bacon.

At the start of the season, potatoes can be very cheap.  10 pounds for a dollar was not uncommon last season.  So what you do is get a bunch of cheap, 2 cup refrigerator/freezer storage plastic cups.

Then peel, pressure cook and mash *just* the potatoes, water and salt, and freeze 2 cup portions in the cups with lids.  After frozen, take them out of their cups, then you can then put them in vacuum bags for long term freezer storage.  While other mashed vegetables aren't as tasty as mashed potatoes, they store very well mashed, then can be added to augment other recipes.  Carrots, peas, turnips, squash,

Remember, in order to get the full nutritional benefit of the potato, you need to eat the skins. Which is good because they are tasty. Plus, peeling potatoes sucks.

Just cut out the eyes and green skin, or you will DIE. Or get a tummy ache. Maybe.

I got some of that Crystal Head vodak -- some friends brought some duty-free back from Cozumel.  Super smooth.  You can mix a scary strong drink with it and not even know you added any alcohol.  And I like the bottle, too.  Got it on a shelf in the office.

The trick to In-N-Out fries is to ask for them extra crispy. They double fry them so they stay good longer. Their fries are good but you have to eat them immediately unless you get them crispy.

Me too, and I like to wash it down with a big glass of flour because it's not nearly as dry as the turkato you describe.

This is the reason why I don't pay attention to food trends.  In another few years carbs will be good for you again too.
Eat everything in moderation.  Choose quality over quantity.  Exercise.
Hard as that is, it's often for people to do that telling them to stop eating their favorite foods forever.
