Waffle House is the single best place to grab a bite after a night of drinkin' and partyin'. Decent folks, and some of the best, greasy food to be found. Too bad they don't have any locations in Vegas. There's a great diner right by my house, but I still miss the "Awful Waffle". Nothing like a triple order of hashbrowns scattered, smothered, covered, chunked, diced and topped, with Tobasco, at three in the morning, on your way home from the club.

They serve waffles.  They also serve eggs, sausage, bacon and hash browns.  Waffle House hash browns can be blended or topped with other ingredients.  In some areas, they come with a side of sadness and resignation.

Yeah, this is not just old news, but really old news.  For example, after Hurricane Andrew demolished South Dade County in '92, everything south of Kendall Drive was demolished along with grocery stores and restaurants.  Not to mention, electricity, safe water and most communications devices.

If you were either a resident or responder down there, relying on government (including military) food and other private sector food supply lines to reopen, those restaurants and grocery stores were a sight for sore eyes, once they began to reopen in the damage zone.  And they did a lot of business.

Eggs, waffles, grits, hashbrowns with toppings, patty melts, bacon egg n cheese sandwiches. They added biscuits a couple years ago.

I got the steak and egss once for shiats and giggles. It was what you would expect to get for $7.

Double order of hashbrowns 'all the way' with some ranch dressing on top is the best post-bar, pre-bed meal you'll ever have at 4 AM. BONUS: your epic morning shiat will smell like chili.

IHOP and Denny's are infinitely inferior to waffle house.  waffle house actually makes good cheap breakfasts.  i cannot say the same for the other all-night diner places

I drove across the Mississippi Gulf Coast one year after Katrina. The place where the Waffle House closest to Biloxi Bay sat had no structure, but the sign was still mostly intact. The place closest to Bay St. Louis - not even the sign was standing.

The real telling website about Katrina's impact was the Mississippi Power site: They had a breakdown of how many customers they had before Katrina, how many had power, and how many total they had left post-Katrina. In some places, if I recall right, it was over a 40% loss in customer facilities, which I took to mean power meters that could take electricity.

It seems like a fair way to see how much risk the locals feel there is and check their confidence-level. Government organizations are far more risk-averse (government offices in the National Capital Region closed down when we got 3 inches of snow because of fears about commuting), but if the locals are willing and able to come in to work, then things might not be so bad. You don't tend to go to a greasy-spoon when your house is rubble and your kids are missing. Plus, its representative of the effectiveness of the transportation infrastructure if they cannot get perishable food deliveries.  From one restaurant being open, you can tell the status of electrical supply, water supply, shipping capacity, and the ability of residents and workers to travel to the shop.
