No, actually, he's surprisingly not. He's got a lot of heart, and actually seems to care about a lot of these folks. One of the reason he comes off as a prick in Hell's Kitchen is that all of these chefs are already *supposed to know WTF they are doing*, so he has little tolerance for ineptitude. You'll also notice in Kitchen Nightmares, the thing that sets him off the most/makes him the angriest is unclean kitchens, unclean food storage, and undercooked chicken/lobsters (since that's actually REALLY DANGEROUS to your customers).

Yeah, I have had to revise my opinion of him based on Nightmares as well. He can still be a flaming asshole, but I no longer think he's a malicious one. Especially since the owners he is working with are in dire need of a few whacks from the clue by four.

He may act like a prick at times, but that is how kitchens operate.  No time to be polite during the dinner rush.  My chef friends who have met him said he was quite nice in person.  Would I be his employee?  Maybe not.
