That's not mysterious.  My basic understanding of highschool chemistry and biology tells me that methane is being released in the poop and there is some sort of film trapping the gas.  This is building up a supply of explosive gasses.  Once an igition source is introduced, boom goes the sh*t pit.

/Sh*t Pit is my band name.

The methane production is not new. The formation of this dangerous, gas-trapping foam is the new factor.

I will guess that it is a result of a subtle change in the food and meds given to the hogs, or some extremophile bacteria in the waste pits is creating the chemical conditions for the foaming.

CSB time:

I met and interviewed the guy that "invented" the modern hog confinement system in Illinois. Devised the slatted floor waste collection system, the feeding regime, the barn proportions, everything.

His goal was to make small family farm operations more efficient and profitable, and make pork more affordable to the public,  but he told me he feels like Dr. Frankenstein, because what actually happened was that the confinement system led to the end of family-owned hog farming, more or less.

Now a handful of huge corporate operations run confinement barn operations with thousands of animals. The small family farm today is used just for weaning piglets until they are ready for the factory farms, and to add insult to injury, the small farms don't even own the piglets. They contract with the big guys like Cargill, who drive up with a load of of piglets, feed, and meds. The farm gets a small fee for housing the piglets until they are raeady for "finishing".  The mom and pop farm is now basically in a kind of sharecropper situation, renting out their land and equipment as a sub-contractor to the big corporation, but not getting any major share of profit from the production chain.  And these CAFO operations as they are called, can generate more waste per day than a small town, but they aren't required to treat any of it.

We get cheap pork and I LOVE my bacon, but damn, the environmental issues of water and air pollution, and the risks of a monoculture ag product, are troubling.

This was a very CSB. I know a little about hog farming, but like you I like pork too much to give it up. Still, it's reassuring to hear that the inventor of the system didn't intend what's happening now.

Yeah, I accidentally left a bowl of egg batter in the sink after making chiles rellenos and the next morning it pretty much looked like this "poop foam".

I'm glad I hadn't seen this beforehand or I probably would have thrown up while washing the bowl.

The problem they're having is that not all the pits on any given farm are reacting the same way, and it's not simple methane.

I think its absolutely ridiculous that they aren't required to treat that waste. It's pretty much the same stuff as sewage coming from a city, if the law forced them to treat it, they would be installing digesters to produce biogas in no time flat.
