To be fair, pressure cookers are not widely used in America, and most Americans only know they exist because of Boston. So an Arab guy carrying a pressure cooker would make some people nervous since it hasn't even been a month since Boston.

That's not how I make rice; pressure cookers are not required to make rice, just boiling water. However I did rtfa and it said he was making some Saudi dish so I guess its possible.

But really, he asked for it by walking out his door carrying a pressure cooker.

Not true. Most Americans live outside the little hive you live in. Most people can vegetables and fruit in the late summer and early fall for the winter. I have 3 cookers and they are constantly used from mid July to late September. Canning is a very widely used process.

Canning is basic food preservation.

It's not about the rice (although the pressure cooker helps there too) it's about the consistency of the chicken and the permeation of the spices in the Al Kabsa.  Pressure cooker is just the way to go.

/crap, now I'm on a watch list for knowing this

Doesn't work for the rice I cook.

Jasmine rice needs a soaking and a smaller water to rice ratio, and black rice has a longer cooking time.

Yea, I don't actually have that pressurized one either.  Went with the significantly(relatively) cheaper HBC18 when it was on sale. Wouldn't trade it for anything, except the smaller HBC10.
