EViLTeW: It's funny that so many people get stuck on the author's dislike of pho and ignore the point where the reason for the dislike is more related to the crazy-ass pho cult that insists she's just ignorant when stating she doesn't like pho.

I get that, for some reason, pho is to hipster foodies as the iphone is to apple fanboys.  Both may be decent, but the cult surrounding them makes them much less appealing.


Personally I haven't run into the pho cult, but I am definitely not a fan of the "foodie" set. "oh, you're ordering THAT? You should totally try one of these other 4 things that are also really good here" "last time I came here the chef made it for me special" "you're ordering the same thing you got last time??? you really should have this other thing" "oh can I try part of your order?" "wow this [whatever] is outstanding today, it's better than usual, here you HAVE to try this!" or worse yet "oh yeah this is pretty good but it's nothing compared to [restaurant in some other city] you really need to eat there, the chef is really awesome" etc etc etc and then of course taking photos of his lunch.

Just EAT IT already and shut up!!

Here's the basic recipe:

Go to a butcher and ask for the stuff he would normally toss in the garbage.
Boil this crap for 2 to 4 hours.
Toss in noodles.
Throw it all away and go out for a Five Guys burger or some currie.

After barfing / pooping my guts out at a hotel in Ho Chi Minh City, where did I go?

I went to the KFC and got some chicken. (I assume.)

After three weeks of "butterfish" and rice, I wanted some dang-nasty battered god-damn cheekan.

I like pho, but... there are times where KFC actually becomes comfort food.

I could have come into this thread and enthused about how much I like pho and Viet food and how everyone's tastes are different, live and let live and all that happy crap, but then I read this:

Only recently found out from a Vietnamese friend that I've been mispronouncing it for 20 years.

The cedilla over the "o" and the little tail on the "o" makes it a very soft sound.  I still don't think I'm getting it properly, but as close as my Caucasian mouth can get it's not "fo" (rhyming with "go") but rather more like "fhaa"

Also, on the topic of Okra.  I too grew up in the south, never understood or appreciated boiled, fresh or pickled okra.  Totally loved cornmeal fried okra (until nearly crispy). Having to learn to eat and cook on a southern diet,  it is a wonder my heart didn't stop by the age of 12.

It's very much a working man type of food; it's made with relatively common ingredients, there's little in the way of fancy cooking methods or obscure preparations. And pho is exactly the type of thing you'd eat when you're hung over and need something to pick you up. It really doesn't fit the profile of a hipster/foodie favorite


A lot of foods that have been trendy and popular were originally working class foods. A foodie food is just something that becomes fashionable for whatever random reason that showed up that day. It doesn't have to come from expensive ingredients or a noble background. Logic does not apply to fads.

The wife and I will get some pho on occasion.  She loves it, I'll eat it.  Not a big fan of the meatballs they sometimes make it with, but some straight beef or shrimp pho can be really good.   One of our buddies used to be married to a little Cambodian girl that would come over and make it for us sometimes. Unfortunately, there's no where in my town to get some.  We have to drive an hour to the nearest Pho Hao.

Pho is great.  But yeah, there's lots of heinously bad pho places. And Calgary is truly blessed to have so many good pho places (but holy shiat, there's lots of bad ones too).  And I've never had good pho in the LA area, for whatever reason.

On a different note, spicy foods are an addiction (not in the literal sense). The act of eating it and suffering causes an endorphin release and people build tolerances over time. I, for one, have gone a little too heavy handed with the Sriracha before...


One might argue that spicy foods are a literal addiction.  My dad got me started on Tabasco and crackers back when I was a little kid.  After 35 years of "chasing the dragon", Tabasco just tastes like vinegar anymore.  I go through a bottle of Uncle Jesters Spontaneous Combustion every couple of weeks.

Meh. As many have said, there's no accounting for personal taste. We can stipulate that everyone's are different - no sense in discussing that any further. This chump isn't talking about personal taste - he's making an absolute judgement about something that he doesn't care for yet millions of other people absolutely love. So, he's just farking wrong - next question.

And it's not a foodie food. It's peasant fare and I quite enjoy it.

Here in oregon, We actually have people from vietnam who live here. It is FANTASTIC. Thinly slice pork which is perfectly seasoned. Nuoc mam (fish sauce) over all of it, is just plain delicious.

So the foodie who wrote this is a moron.

I guess it depends where you are from,  There's just a big asian population here and it's a good food i happen to like.  I've never heard this related to 'hipsters' or anyone that talks about Pho like that until I read this article.

Of course i find it really shocking that people will find food less appealing because of other people. I like or dislike something because of my own opinion,  Bizarre that you would even consider other people when thinking about if you find that food appealing.

You missed the point.  The article isn't about how he dislikes it, it is about the reaction other assholes have when they find out he doesn't like it.  Kind of like on Fark when someone gives an opinion without understanding what they are talking about.

It really does matter where you get it. There's a place (or was a few years ago) on University Avenue in Seattle that does an amazing job, Probably because it's the only thing on the menu. I tried some in Berkeley that was wasn't so good, but They delivered until four am. The cool thing about that place was that they delivered all sorts of stoner/drunk food untill 4am. I've never tried the masala but looking at a recipe it looks like something I'd try.  Frying okra is hands down the only way to eliminate the sliminess and the bhindi masala recipe calls for it to be stir fried.   I'll give it a shot.  Thanks!

Pho is awsome, especially when it's rainy and cold.  How could you live in Seattle and not love it, is the question.

You've got to go to the Vietnamese places where there are viet people eating, or you probably getting the cheap stuff.

I like the pho with rare beef on the side; drop it in the hot broth for a few seconds; scoop it up with the rice noodle and vegatables already in the bowl.  But really it's good with chicken, Tofu, or whatever meat you like.

Very good.

Bun Bo Xao Ot for me please... At some places you need to ask if you want cilantro and bean sprouts.  Add pepper sauce until it is really then dump the fish sauce on and stir it all up before the first bite.  The places that serve Pho usually have Bun also and it is, in my opinion, consistantly better.

To be fair to the author, people can go overboard when it comes to food trends.  He's no doubt, being from Seattle where Pho is super-hot for the last several years, constantly pinged on about how strange it is that he doesn't like it.  Plus, since the Seattle Times no doubt has a large chunk of readership that falls into the food hipster category, this type of article is bound to generate a lot of clicks and comments.


Certainly! There's a ridiculous variety around Everett, ranging from What the Pho to Yummy Deli on Evergreen and Casino. And the quote: "Disowning pho is like telling a vegan how much you love KFC" is a perfect example of two things you can do to bewilder people in Seattle.
