FTA: "Fontina and blackberry basil smash grilled cheese"

What kind of uncultured Philistine puts blackberries on a grilled cheese? Anyone who does this must be some sort of a coprophage.

A simple grilled cheese(on sourdough) and some tomato soup is as good as it gets.

I'm going to celebrate by going to Five Guys and order a grilled cheese sandwich and some fries for lunch. Haven't tried it since I just go for the burgers.

/I like to use a panini press at home to make all sorts of delectables using some crusty breads, different cheeses, cured meats and some greens. Good with a garlic and cannellini bean soup on the weekends

As long as it's not that caramel lobster atrocity from the other day

My recipe is so ultra secret...what the hell, I'll share it. I mean, it's a national holiday right?

Bread, butter, multiple slices of cheese.

It's fantastic. You should try it.

Butter the bread
Put in the cheese
Grill in pan
Put on plate
Dip in tabasco

Why mess with a classic?

Lobster grilled cheese is off the charts.

The Lumberjack from Gorilla Cheese in Hamilton, ON. Old cheddar cheese, bacon, green apple and maple syrup. A foodgasm in a little foil pouch.

Sprinkle some Accent (MSG) on the buttered bread before you cook it. It's so damned good. I keep a little container around just for the twice or so a year that I make a grilled cheese sandwich.

I've made these

several times, they are awesome, even if the mushrooms can get a little pricey.

I like it with balogna. I'll have to try it with tobasco.

So do their fries. How can a burger place have BAD fries? They aren't just average or not good, they are bad. I do however like the fact that I can get Fresh Jalapenos on my burger there, that is the one redeeming quality. Overall, 5 Guys is extremely overrated though.

F*ck y'all, I'm hungry and can't do a damned thing about it for 3 hours.

Taste best when made with individually wrapped slices of cheese product.

2013-04-12 01:18:26 PM
I always say this in grilled cheese threads, but I have to say it again.

if there is anything in the sammich other than grilled cheese, then it's not a grilled cheese.

and personally, I think american cheese and white bread make the best, classic, grilled cheese. don't fark it up with all that fanciness, that's not cool.

2013-04-12 01:19:53 PM
I caramelized some onions last night to go in a nice grilled cheese sandwich tonight. I will also be making a tomato soup.

I like my grilled cheese with real cheese (cheddar, fontina, gouda, etc) most of the time. However, I sometimes like to make the old fashioned way with regular white bread and a slice of american. But the only way to eat one of those is if I have a pile of dill pickle slices on the side. I eat a pickle slice with every bite of sandwich. Anybody else do this?

Bread, butter, cheese.

A dill pickle with a grilled cheese sandwich is excellent. I don't purposefully eat a bite of each every time, but the sourness of the pickle with the sandwich at the same time is excellent.

Exactly.  It might be a great sandwich, but if it contains anything other than bread, butter, american and mayo, it's not a grilled cheese sandwich.

Cataholic: mayo

HORK!

2013-04-12 01:28:25 PM
most fatass way to make it, no butter, mayo on the bread. SOOOO overly bad for you, but if you're at the point of making a grilled cheese you'd said fark it to all other low cal options you dont care, might as well take it up a few hundred notches!

If you havent had it that way, you're missing out on life seriously!

/damnitsomuch i want one now

Precisely. If it's anything other than bread, butter, american cheese, mayo, and maybe another condiment or garnish served with one of 5 specific, though optional, things to dip it in, it ain't no grilled cheese.

Sourdough bread
Rosemary, a little olive oil brushed on the outside instead of butter
roasted pepper
smoked gouda cheese

If you are lucky enough to live in New Mexico...
Tortilla
Roasted Hatch Green Chiles
Mild Cheddar/Colby/Jack/Manchego or Fresca Queso (really light and fluffy cheese)
Maybe a little butter...

Pumpernickel Rye
Swiss and Havarti
Tomato slices and basil
Ham slice

I know Subby asked for grilled cheese recipes, but here is a good tomato soup recipe to go with the GC.

2 tablespoons butter
1 medium onion, chopped
1 small carrot, peeled and finely diced
2 tablespoons flour
2 pound fresh tomatoes, peeled, seeded, and chopped, or 1 (28-ounce) can crushed tomatoes, juices reserved
2 cups reduced-sodium canned chicken broth
1 tablespoon tomato paste
1 tablespoon fresh basil or 1/2 teaspoon dried basil
2 teaspoons fresh thyme or 1/2 teaspoon dried thyme leaves
1 bay leaf
1 cup light cream or milk
Salt and pepper

In a large nonreactive saucepan, melt butter over medium heat. Add onion and carrot and cook, stirring frequently, until softened, 3 to 5 minutes. Add flour and cook, stirring constantly, 1 to 2 minutes without allowing to color. Add tomatoes with their juices, broth, tomato paste, basil, thyme and bay leaf. Bring to a boil. Reduce heat to low, cover, and simmer stirring frequently, 15 minutes. Remove and discard bay leaf.

In a food processor, blender, or use and immersion blender, puree soup in batches until smooth. Return to pan and stir in cream. Season with salt and pepper, to taste. Simmer until heated through, 3 to 5 minutes, and serve.

American cheese sucks ass and only an idiot would put mayo on a grilled cheese.  Extra sharp cheddar.

Oh and whoever threw noodles on that sandwich ^ there should be shot to death and then banished to another country for life.

....and by "crushed tomatoes", I mean to say 1 28oz can whole peeled tomatoes, hand crushed, with the juices reserved. Although already crushed tomatoes in a can would probably work just fine too.

I can handle cheese, so I shred pepper jack, place chopped onion on a corn cake (http://www.cornthins.com/prodOriginal.aspx) topped with cheese and a dash of dill, melted in a micro. Gets me through the weekend.

i posted this in the other grilled cheese sandwich thread, so i'm going to repost it here:

back in my youth i dated a vegetarian for about a month, and sometimes we would make fancy grilled cheese sandwiches.  now, it made sense.  vegetarians really don't have many options.  you just have to turn things like grilled cheese into something better.  like, use a nice white cheddar, and perhaps find another cheese that matches, like fontina or whatever.  also, then we added some kind of small vegetable, like a sprout or something, to balance it all out.

it wasnt' bad.  but, when i make grilled cheeses these days, i use cheddar and bread.  nothing fancy.  because I have meat in my life. i don't need to to make these conciliatory meals better.

but, i was reading in a magazine about sandwiches, and some chef said he puts on a thin layer of mayonaise on the bread, and throws the bread, mayo side down, in the pan/griddle.  i thought, ridiculous, impossible, preposterous, it's an outrage!  and i throw the magazine to the floor... but, the seed was planted... i was infected.  i had to know if i was being lied to, was it real?  could you grill the mayo side of the bread?

and then i tried it.  and i was like, holy shiat balls, this is awesome!  it perfectly carmelized the outside of the bread, but maintained the softness beyond the exterior crunch!  then, i also noticed, this is not the first time i've tasted this.  i've tasted this at some serious sandwich places.

react as you will, call it an outrage, put me on your ignore lists, do whatever you must.to help maintain your sanity... but, know that the seed has been planted, there will come a day when you grill your mayonnaise into your bread.  and on that day you will remember the man they called pute... the mayo-man pute...  the one who, in this blighted place known as fark, taught you to live again.

I wouldn't either but I wouldn't lie to my friends and say I had a BLT. I would tell the the truth. I had a bacon and egg sandwich with lettuce and tomato. and then they would say who gives a shiat.

I love plain grilled cheese, but when I want to get fancy I usually go with thick-cut bacon, thin sliced green apple, and cheddar. It is a classic. But I think I will try it with maple syrup next time like the one Glenford mentioned. That sounds even better!

2013-04-12 02:01:55 PM
When not eating grits, I go with:

Multigrain, buttered on the outer face, light Dijon coating on the inner face
Butterkase (sp?)

Simple and tasty

This. (Velveeta as a substitute being the exception. And sometimes you just gotta use up whatever bread you have lying around.)

No mayo, pute.  Not going to happen.  It'd be like farking a horse; not going to do it no matter how good you say it is.  Horse farker.
