Not sure if it was an Easter Egg in a traditional sense, but the Spider-Man crashes the X-Men (the first one) was a great moment.

The long backwards shot in Top Secret? Fool around enough with the DVD menus and you can see it as filmed.

I liked the Terminator 2 easter egg with the extended director's cut of the film. I thought that was neat, a third cut of the film, hidden as a bonus.

I love the Fight Club/Never Been Kissed prank.  That had to have a lot of wannabe anarchist (that for some reason bought a DVD) freaking out.  And it was a burn on Berrymore to boot.

There's a pretty cool one on the Mamma Mia DVD; If you wait ten seconds on the menu screen then press 'Eject', you don't have to watch Mamma Mia.

There is an egg on the old DVD of Dr. Strangelove where Peter Sellers does about ten minutes of character impressions. It's awesome.

The best Easter Eggs are on the Dodgeball DVD. Or more-so the non-easter egg commentary that becomes very awkward very quickly as the fighting starts and seems pretty genuine. One easter egg is a real commentary.

My favorite "Easter egg" is on The Simpsons season 4 bonus commentary track on Marge vs the Monorail. It is why I will always love Conan O'Brien.

No matter if it's practical, optical, or cgi, special effects takes a lot of man-hours to do.  And of course, if you are having to do one character for months, you better develop a sense of humor, or burn out really quick.  Imagine what kind of insanity we probably never get to see.
