o0weno: When I bottled it, I bottled it with honey instead of corn sugar. This woke the yeast up, and the saison yeast just went bananas. Instead of finishing at 7.5% (abv), it finished at 9.8%.He's skipping over a step, or has no clue how to brew beer. If he had bottled the beer using honey at bottling time there is no way the beer would have gained that much alcohol, and not exploded out of the bottle. I'm thinking the kit told him that he would have 7.5% and when he tested it at bottling time it was 9.5%.At the homebrew level its difficult to test the ABV of a beer after it has been bottled./Mostly just jealous that he gets to brew a beer with Stone.//Didn't want folks to think that a beer could gain that much booze during the bottling process.
TerpDon: this could also be the case of the reporter doing some subjective editing and not knowing what the hell they are talking about. it sounds more like he added some honey at secondary, before bottling. but subbing honey for DM is not going to give you that much of a push with out an entire batch of glass grenades.I did get a chance to chat a little bit about this project with Mr. Koch and while he did give me a bit of professional courtesy about it there is not much more info beyond a name, and I will maintain the courtesy until the official release time. But, Its stone, and they can do any damn thing they want to, and you will be happy to take it.I'm the reporter, and I'm getting a kick out of these replies. Seriously, I am getting a kick out of them. I'm pretty sure I transcribed what he said word for word, but that was pretty late in the interview and I might have been going crosseyed at that point from staring at my computer screen. I'll have to go back and listen to it again to make sure that's what he said. He was super cool to deal with though, and really does have an enthusiasm for brewing.
TerpDon: Thanks! Just recently started covering the san diego beer scene after the asshats at clear channel laid me off. Examiner doesn't really pay anything, but I'm treating it like a paying gig so I can build up a writing portfolio.
