What's the difference between a cocktail and a martini? I know the name "martini" comes from martini gin but that's it.

I think martini is subset of cocktails.  Limiting.

It depends what version of the word "martini" you mean.

If you want to be technical about it, a martini is a specific cocktail.  Gin and vermouth, garnished with an olive.
Even changing the garnish makes it a different drink.  For instance, subbing a cocktail onion instead makes it a Gibson.

On the other hand, if you want to know the difference between a cocktail and a "martini" as it is commonly used on drink menus, there isn't one.
In those terms, a martini is just any cocktail served in a martini glass and then called a _____-tini by the establishment.
It's fairly meaningless, which is why I personally object to that usage.
