The Egyptians slaughtered Jewish babies first so it was kind of a payback thing. That's why the river turned to blood, to represent the blood of all the Jewish children the Egyptians used to throw in the river to kill. They used to do it for years before the whole exodus even started.

And the plagues are not celebrated.  Spilling the drops of wine is symbolic of acknowledging the pain of the Egyptians.

Yeah also have you ever even been to a pesach seder? Where is the celebration there? You eat foods specifically chosen to symbolize the tears, bitterness and pain the Jewish slaves went through in Egypt and we eat matzah to remind us of how we were so rushed to leave we couldn't even let the bread rise to take food with us on the way out. Where is the celebration there?
