Good headline, but not sick. I suspect a US plant inspected by the USDA will be much more humane than one in Mexico.

So far, I've not seen an example of that in the States.  I'm with a few others in this thread - as long as you label it appropriately, let the consumers decide.  If they don't want horsemeat, then the market will dry up here.

So have they started testing everything in the US for horsey flavours yet? Given that a lot is produced in Mexico I find it unlikely that our friends across the pond aren't enjoying a few equine edibles as well.

It cooks exactly like beef. You can cook to pink, rare not recommended. It's flavor profile is sweeter than beef slightly close to venison though not as gamey unless its an pretty old horse. Ground is recommended to well done.

Makes excellent tacos

....I lived in a communal home with migrant and day laborers for a several months. You eat anything that moves when you're at that level of society.

If there is one thing I've learn from watching Andrew Zimmern and Anthony Bourdain is that large parts of the world fights daily to get adequate amounts of protein in their diet. And for wussy 1st worlders to say "Ew, that animal is adorable or that part of the animal is gross" is clueless and denigrating.

I've had goat, sheep, donkey, horse, monkey, hippo, crocodile, dog, cat, hedgehog, bushrat, muskrat, and a whole slew of antelope-looking critters that I'm not enough of a zoologist to identify. In general, most meat doesn't taste like chicken, it tastes like goat. Or like what it eats.

So...

Dog tastes like tough goat, but is tougher.
Cat tastes like goat, with a weird stringy flavor (but that could be because African cats eat weird things).
Donkey tastes like goat, but is blander and very very tough (donkeys in developing countries lead hard lives)
Horse tastes like a cross between goat and beef, and is also quite bland.
etc, etc
