My special lady friend of 3 years & I are spending this 2/14 in our respective homes. Her son & mine both have some nasty stomach ick. Stayed up late last night watching my kid puke all over the place. Looks like I'll be doing again tonight.

Note to single folks considering having children: Do it. Trust me - it's worth every penny & minute of your lives.

Pan seared scallops: Over medium-high heat, melt approx 1 tbsp of butter in a small frying pan until bubbling stops (should coat the pan thickly). Place 6 large sea scallops flat side down in the pan, leave them undisturbed until there is a brown coating on the underside (approx. 2 min). Flip so the fresh side lies in a fresh patch of butter, cook until brown on the underside. Once the scallops are done, set aside and add a minced shallot to the pan and cook until it begins to brown. Deglaze with 1/4 cup of dry white wine. Add shallots back to sauce and pour over scallops. Add a squeeze of fresh lemon juice and garnish with thinly sliced scallions.

/Pan seared scallops are stupidly easy to make, and reward you with a delicious meal WAY out of proportion to the amount of effort put in. Now go cook it for your sweetie.

Dinner tonight was butterflied pork chops with fried apples, with a side of green beans. Very tasty, that. And dessert was a homemade strawberry and chocolate parfait that had, sadly, melted more in the refrigerator in 30 minutes than I thought it would. Ah, well... My lady still liked it very much. :-)

Hmmm.

After reading this, I am now aware that spreading chocolate syrup on my "junk", may have not been appropriate.

The other guys at work were not impressed.

Pot "roast", braised in a low oven for four hours, smashed red potatoes, tomato/onion/carrot sauce. Hard cider. Romantic is a mindset, not a thing.
