A number of years back I had some liquid nitrogen left over from an ice cream making party, so I asked my (then) three year old "if you could make any flavor ice cream, what would it be?"

"Peas!"

Uhhhh. Okay.
Fresh organic sweet peas, lightly steamed, puréed with sweet cream and sugar, add LN2 and....

Peas ice cream!

It was weirdly good.

But it was still peas.

Azuki bean (often called red bean) is used in a lot of deserts in Japan and Korea.  Azuki ice cream is pretty popular there, and it's surprisingly good.

It's hard to describe the taste.  It really does taste like a bean, so the flavor it gives... doesn't seem like it should be sweet, or part of any sweet dish, on one level (at least to someone who grew up on American cuisine).  But on another level, it does work.  A lot of snacks made with azuki are quite tasty.

To someone mostly accustomed to American food, azuki is sorta like the opposite of mole poblano (a chocolate sauce used on meat): it seems weird or wrong on some initial level because it defies the "normal" food categories, but if you get past that, it's delicious.
