This is the best macaroni & cheese recipe (from James Beard) ever:

4 tablespoons butter
4 tablespoons flour
2 cups milk
Freshly ground black pepper
½ teaspoon Tabasco (or more to taste)
½ cup heavy cream or crème fraiche
½ pound macaroni elbows or double elbows
¾ pound grated Cheddar cheese

Melt the butter in a saucepan over low heat.  Add the flour and stir it with a wooden spoon or spatula for around 3 minutes, until the roux is frothy and the taste of raw flour is gone. Meanwhile, heat the milk in another pan.  Add the warm milk gradually to the roux, stirring hard all the while.  Turn up the heat and cook, stirring, until the sauce is just at the boiling point.  Turn down the heat and let it simmer for a few minutes.  Now add the pepper and Tabasco.  Don't be afraid of the Tabasco:  it will help to brig out the taste of the cheese.  Stir in the heavy cream or crème fraiche and simmer a little longer, until the flavors are blended.

Cook and drain the macaroni.

Mix three-quarters of the grated cheese into the simmering sauce.  As soon as it melts, combine it with the drained macaroni and pour it into a baking pan.  Sprinkle the top with the remaining cheese and bake for 20 to 30 minutes in a 350-degree oven.

I did. I think don't think that article would have made it to BB without the Lance Armstrong Foundation snafu at the top. Funny, within an hour of Xeni's post, the LAF banner was changed. The panties typo was still there.

I make it for parties where there will be at least 10 people (usually closer to 20)... certainly not for smaller get-togethers!

Whew! I looked at the pic in the profile, then thought 3.5lbs of cheese dip. Somehow I just couldn't put it together.

My go to is home made goat cream cheese with chillis. Make cream cheese from goat milk (helps if you have a heard of goats, I'm spoiled that way) add chillis, onions until you're at the limit of your tolerance, garlic and cumin don't hurt. Dip chips in it.

Teufelaffe: ChubbyTiger: Velveeta I'd pretty far away from being cheese in almost every sense. It doesn't even contain cheese. It's a mixture of dairy stuffs, but that's about it.

Velveeta ingredients:
Milk, water, milkfat, whey, milk protein concentrate, whey protein concentrate, sodium phosphate, salt, calcium phosphate, lactic acid, sorbic acid, sodium alginate, sodium citrate, enzymes, apocarotenal, annatto, cheese culture.

Cabot Seriously Sharp Cheddar ingredients:
Pasteurized milk, cheese culture, salt, enzymes, potato starch, corn starch, calcium sulfate, Natamycin

Cheese is largely about process and proportion of ingredients, rather that just a list. Velveeta isn't necessarily bad, it's just not cheese.
