I was watching that ASI like a hawk, and it was bouncing around all over the place. A few times I thought he exceeded Vne, but on closer inspection it was because the ASI was reading incorrectly, unwinding because of disturbed airflow around the pitot tube.

Vne is the airspeed you're not supposed to go over because the airplane no likey and can the control surfaces can break off or just stop functioning due to aerodynamic concerns, and it is measured by a little tube what uses Bernoulli's principle to determine said airspeed.

I settled down a bit when I noticed that every time he pointed the nose down to gain airspeed, it went into the yellow, but not too close to the redline.

Vne means Velocity never exceed. Manufacturer makes no promises about you, your life, the plane, etc. above Vne.

Above Vne you are a test pilot.
