Most of the goofy buckwheat pancake mixes that are sold have regular flour in them as well. I make mine by using 50% buckwheat flour and 50% homemade gluten free all purpose flour (brown rice flour, white rice flour, tapioca flour, xantham gum). Works wonderfully. Especially with some mashed sweet potatoes mixed in to the batter. Dammit, now I'm hungry.
