It takes a lot of weight off for one. The lighter the plane the easier it is to tow out of mud.
That and it takes quite a bit of time, there are other hazards associated (a gear collapse with passengers aboard would suck)...there are plenty of reasons to just bring a stair truck and a bus out there.

Very good chance that plane wasn't going to be flying again that day. They'd have to drag it back to a maintenance hangar and the mechanics would give it a good once-over before putting it back into service. It's an airplane, not an SUV. It's not exactly designed for muddin'. Even if the airline's name has South in it.

Probably due to the depth of the front gear. It likely faster to bus the passengers back to the terminal and put them on a different aircraft than it would have been to tow the plane out of the mud, inspect the gear, and get it ready to go back in the air.

Plus, they can't just 'tow it out'. Due to the depth of the nosegear, they may have had to jack it up, put something under the nosegear, and then tow it.
Just hooking on to the nosegear and pulling (even if possible at that depth), may have seriously broken something.
