Well now I want fish for dinner despite having already planned for today. Mmm. Tomorrow, I guess.

The thing is, red snapper won't go extinct as long as the price is kept down by the fact that vendors can simply substitute tilapia for snapper. If you have a magic iPhone app to verify snapper DNA, suddenly the tilapia-substitution thing goes away, the price of genuine, verifiable red snapper skyrockets, and people get rich fishing red snapper to extinction, every fish taken making it more and more rare and increasing the price of the next one ever higher. Which is fark-all stupid knowing that people can't tell the difference if you DID give them tilapia and the only point here was to eat something rare out of a commodity fetish.

C) Deregulate the market and let the companies police themselves?

It is not appropriate for the government to regulate this because public health is not at risk, and the environment is actually helped.
However, there is a mile-wide opening for commercial fishing interests to set up some sort of private organization with a logo people can trust saying exactly what fish it is. With a little publicity, restaurants with the logo on their menu should be able to charge more for their fish.

It's theft, plain and simple. Sure, it's not on the same level as selling a fake diamond as a real one...but the same principle.

Fraud is usually addressed in torts. Each of these restaurants is free to sue their suppliers, and each customer is free to sue the restaurant. Neither of these means the government should be preemptively regulating this particular market. By the way, "lie but do no harm" is also the guiding mantra of the FDA for herbal "medicines".

But not all Pu**y tastes like fish.

I agree with you about overfishing, but what these guys are doing is outright fraud to make a buck.

That said, I dont understand the stigma attached to tilapia. It is a decent mild white fish that tastes fine. Just properly label it as such.

That's a fantastic rationalization and it's due to the fact that you're not concerned with it personally.

If the same thing were to happen to you where you were being deceived about something you value highly you'd be extremely pissed off at people for being "creative" with rationalization like you are now and be unaware of your own hypocrisy.

If you go to a chain steak house and order fish, you deserve what you get.

Or..... you can have a situation where the governed have decided it's more efficient to allow government oversight of the fish supply rather than personally identifying incorrect fish, paying for a personal fish DNA test, and clogging the small claims' court system with generally unprovable nonsense since they really don't have the resources for an evidentiary chain of custody.

Eh, true... that said, I still might pull a Folger's Coffee switch on my Mom for Christmas Eve.

She's insisting on Orange Roughy out of tradition. I'd rather buy Michigan caught whitefish (especially considering I can buy directly from the people who catch it, and it's cheaper). I probably won't have the guts to do a whole scale switch, but we bread it and bake it and I might throw a couple of filets of whitefish in there to see if anyone can tell.

Granted, it's still got skin on one side, but I'm the one doing the breading and baking anyhow...And the filets are a similar size and both white fleshed.

Also, am I the only one who can't stand Tilapia? I've tried cooking it multiple ways and got it from a reputable dedicated-only-to-fish guy at a local market the SO worked at... unless I fry the heck out of it I just don't enjoy it. And even then.

It has that earthy flavor that's difficult to override. Try strong-flavored oils after marinating. Maybe spicy sesame (Raa-Yuu).
