Actually, you got it right subby. Most people don't know that taint is not recognized by the UDSA as meat, so some companies use taint to flavor-up their veggie burgers. It can add a hint of earthy tang, as well as giving the burger a more natural brown color.

Doesn't affect me, I buy Morningstar Farms veggie burgers. You know, the ones with water chestnuts.

/those are water chestnuts, right?
