best thanksgiving Surprise of Deliciousness: Baked Brie. it had some kind of fruit compote in the middle of it, which wasn't bad but kind of distracted from the pure yummy of the baked brie.

trippdogg: Non-food Thanksgiving related question.

What is the protocol for answering in-house emails? My ex-wife (in the living room) emailed our daughter (in her bedroom) and was upset when she didn't get a reply within an hour. My daughter's position was "I figured I'd just tell you when I came out for supper". This answer didn't sit well with the ex: "So you read the email and chose not to answer it?"

Any guidance would be appreciated.

IMHO, e-mail should never be employed if an urgent answer is needed or expected. If your ex wanted an answer to the question immediately, she should have employed another communication method (worst case, she could have gotten up, walked over to the bedroom, and knocked on the door).

MappingChick: Caprese salad on a toothpick!

Cherry tomato, basil leaf, miniature fresh mozzarella ball, sprinkle with balsamic vinegar.

We had this as an appetizer for Thanksgiving (I was a guest, so I can't take credit for making them), and I gotta say, it was terrific! It's a nice light yet tasty contrast to all the heavy holiday fare you end up eating throughout the day. And it seemed super easy to make! The way they were made, the basil leaf serves as kind of a hammock for the tomato and mozzarella ball, and does a great job catching the balsamic vinegar (and olive oil if you so desire). Anyone could make these. Yum!

I think it's from some Adam Sandler movie.

Wise_Guy: jboy: Mashed potatoes from scratch are always easy and a bit more impressive than the powder (Although the powdered ones, particularly the idaho brands have come a long damn way.)- Cube potatoes, boil until soft. Add butter and milk and mash together. Salt to taste, although if you're using the right butter it may not be necessary.

Try heavy cream instead of milk.

Although you may die earlier.

I use a little neufchatel cheese (it's sold next to the cream cheese, with the big label that says "1/3 less fat than cream cheese") in addition to the butter and milk. Really makes things nice and creamy, without making it a heart-stopper.

We've done Elk before (including thanksgiving this year).

Best way to make it is sous vide for a good long while, then sear and make a wine and mushroom reduction. Serve with mashed sweet potatoes and brussel sprouts sauted in bacon fat and then roasted. Many noms were had in the depths of the Slor that day, I can tell you!

/sad that dinner was frosted mini-wheats now

It's a half gallon, as much as I love my french toast I use namely eggs for that (and cream, richer taste). There's no way I could make enough french toast to deplete that carton.

Might just have to buy more whiskey and eggs....

Thirded. Email is for non-urgent communication. If you need an answer right away, get up and ask face-to-face. If you can't be bothered, expect to get your answer whenever the recipient gets around to it.

Hot Chocolate

Melt one package of semi-sweet chocolate morsels. I do mine in the microwave in a glass bowl a minute at a time stirring after each minute.

While chocolate is melting, seed and dice one red or orange habanero pepper.

Stir pepper bits into melted chocolate.

Put mixture onto a sheet of wax paper. Wrap into a log roll and put into the freezer fro 30 minutes.

Unwrap and slice the log into 1/4 inch slices.

Place on candy dish unlabeled for your unsuspecting guests.

These are actually VERY good. The fruitiness of the habanero goes very well with chocolate and the heat isn't ridiculous. There is about a five second fuse before the heat kicks in. This is also useful for opening clogged sinuses.

Penguin Appetizers?
crow202.org

1 carrot
1 can large or extra-large black olives
1 can medium black olives
1 pkg cream cheese
toothpicks with flags on them

Peel and slice carrot into ~2mm thick rounds. Cut wedges out of carrot, save pac-man pieces and wedges for use later. Slice front of large black olive. Stuff large olive with cream cheese--use a pastry bag or a plastic bag with the corner chopped off, that makes it easier. This makes the penguin body. Put carrot wedge into hole in medium olive--this forms the penguin head. Put pac-man carrot piece on bottom, penguin body in middle, penguin head on top, then use a toothpick to hold it all together. Repeat until you run out of olives or patience.

Penguins can be stored at least 24 hours in a plastic container with a bit of water. They're a bit bland, but people seem to like the way they look.

Party nibbles: 8 shallots finely sliced. 2 tablespoons crunchy peanut butter, 1 tablespoon light brown sugar, 1 small pineapple or 4 rings from a can, cut into chunks. 1 lime, 1 red chilli sliced finely.

Heat a little oil in a frying pan and fry the shallots until they brown. Reduce the heat and add the peanut butter, sugar and soy sauce and stir until the sugar has melted. The mixture should be sweet and salty so add a little salt if you need to. Cool. Arrange the pineapple cubes on a plate and put a heaped tsp of mixture on each. Top each with a squeeze of lime, a piece of chilli and a coriander leaf.

Yummy.

Brine turkey overnight. Fill cavities with chopped onion, garlic cloves, parsley, and celery (including leaves). Cook in an electric oven so it doesn't dry out.

Turkey Gravy: While turkey is cooking, boil giblets in small amount of water with sliced mushrooms, poultry seasoning, salt & pepper to taste. Dice giblets and set aside. Remove cooked vegetables from turkey and place in blender, blend until liquified. Take pan drippings, remove most of the grease, and add liquified turkey vegetables. Add 1/2 to 1 cup red wine (fruity pinot noir or merlot) depending on amount of liquid and taste. Before serving, add giblets (including liquid and mushrooms) to about 1/2 the gravy (in case anyone doesn't like giblets - or just throw them all in anyway). Depending on the seasonings in the brine mixture, this gravy usually doesn't require much in the way of additional seasonings, and a red wine will not overwhelm it while a white wine might get lost.
