Best Burger Ever



Ingredients

8 ounces sirloin steak meat, trimmed and cut into 1-inch cubes
8 ounces chuck steak meat, trimmed and cut into 1-inch cubes
8 ounces lamb shoulder meat, trimmed and cut into 1-inch cubes
Kosher salt
4 ounces grated Cheddar, smoked if preferred
4 hamburger buns
Mayonnaise

Directions

Special equipment: Chimney starter, all-natural lump charcoal and kettle grill

Pass the meat through the coarsest die of a food grinder. Place the ground meat into a bowl and mix together to evenly distribute the different types of meat. Place in the refrigerator uncovered, for 2 hours. (I have also seen him do this recipe with "10 quick pulses in a food processor, no more.. and it worked GREAT for me)

After 2 hours, fill a large chimney starter with charcoal and light. Once the coals are ashy white, transfer to a kettle grill and spread evenly. Set grate over coals.

While the coals are heating, shape the meat into 4 patties that are 6 ounces in weight and 3/4-inch thick. Sprinkle each patty on both sides with the salt. Place on the grill and do not move for 2 minutes. Flip the burgers every 2 minutes until they reach an internal temperature of 135 degrees on an instant-read thermometer. Watch for hot spots and move the burgers if flare-ups occur. Resist the urge to smash down on the patties. Remove the burgers from the heat to a plate and prepare the buns by placing them on the grill, cut side down for 1 to 2 minutes. Remove and place them cut side up on a platter. Divide the cheese evenly between the top buns, set the meat patty on top of the cheese. Coat the cut side of each bottom bun with a little mayonnaise and set atop the meat. Allow each burger to sit upside down for a minute before flipping and consuming.

Hell, almost every crossroad in America has a great burger joint!!!!

"Food and Wine" magazine publishes list of best burgers in the US, calls entire list into question with #4.

Actually, the first slide calls the entire list into question, with its reference to Kobe beef. You'd think Food and Wine Magazine would know better and be aware that true Kobe isn't available outside Japan.

I noticed that none of the burgers on the list claimed Kobe beef (one did claim Kobe-style beef), even though Food and Wine said they were importing it from Japan. Idiots at F&W magazine should know that Kobe beef cannot be found anywhere in the US.

Damn right. Quint with cheddar, bacon & egg, and hot peppers (on the grill). Papa fries.

The Original Tommy's double chili cheese burger w/ chili cheese fries and if you don't get a small handful of those little peppers you are teh ghey.

As mentioned above, Twisted Root in Dallas. Come for the awesome burger stay for root beer.

Came here to say this. All the burger joints listed aren't anywhere near where prime cattle is raised. Epic, epic fail.

They recently opened up a Five Guys restaurant in my city. Good lord, I have never had a worse tasting burger & fries in my life.

How drunk I am factors immensely into what sort of burger I might enjoy at any given moment.

Seems the thoroughness of their review of burger joints is equal to the quality of their slideshow. Everything is in New York/NE area except the few places in Cali and Nevada that they had overheard about at a rooftop wine party. "oh it's a simply diviiiiiiiiiine burger".
