I still remember the episode in some sub-Saharan country where he ate the eggs fried in animal dung. To be fair, he talked shiat about that, too. But at least he didn't precede it with a slam on airport terminal food.

If you go to a foreign country and eat everyday food, you accept the local sanitation. You needn't accept those standards in the United States. The woman in question, by any health code around, should have been wearing disposable gloves.
Thats the rule in California. I really can't imagine New York's standards are any different. When you get down to it, most major cities could use a lot more inspectors.
As far as wheather or not he can be called a chef, Bourdain readily admits to being a line cook. He does have a talent for writing and presentation on air. Which is why writes books and has television shows.

Personally I like Bourdain's shows, but I think 'Tweeting' is stupid. I get really offended when congressmen do it during the State of the Union Address. But that's for another tab.

Isn't the entire point of his show that he acknowledges food from all around the planet, including other cities in the USA? As for all the pretentious talk, it seems redundant to call someone from Manhattan pretentious.
