I've always wondered - how does one operate the grip and other motions on a hand prosthesis like that? Especially back then, when they couldn't have done the surgery we have today to make as much use of the remaining muscles as possible?

Good catch. Looks like they updated the article.

Update: The above image is a misattribution. This image, via Coilhouse, is Berlichingen's hand. The other image is a later 16th-century prosthetic, circa 1580.
