You can get any color honey you want. All you have to do is mix any color food dye (like in M&M's) with sugar and water then feed it to the bees. They will make honey from it with the color of the dye.

That's gotta be what's going on here. Think about it. Unless the M&Ms of all one color are out for a week and closed up for a couple weeks, there's no way there's only one color of honey. If bee's are getting random dye from random M&Ms, it's going to look like raw sewage, not blue or green.

Like all brightly coloured consumer products, M&Ms are manufactured one colour at a time, then mixed together later to make the mixes we see. M&M produces several dozen different colours of M&M, all of them in enormous batches of single colours, one at a time. So while TFA does not make it clear, it's entirely possible, indeed likely, that, yes, they're storing huge quantities of waste M&Ms of single colours per bin. And yes, the bees may be gathering from different ones, which would seem to confound that. But bees tend to choose specific sources at a time, and that would lead to honey production from single colour runs at a time. Also, the blue dye used in the blue and green colours is particularly durable, meaning it may survive better than other food dyes -- which would logically make blue and green honey more likely than most other colours. (It has some other interesting properties, too, such as being a likely emergency prophylactic against debilitating spinal paralysis. Really.)

Hmm. Food colouring is mostly water. I'm not sure what happens if you add a bunch of water to honey.
