Langdon Alger: I'm from texas and I think this list is crap----texas for the beef, KC & memphis for the ribs, and south east coast/carolina style for the pulled pork. And as a bonus Pac Nw for the smoked fish. Each reagion has a specialty but it doesn't mean you can't find a place in each region that BBQ's everything pretty damn good. Hell, I know some pit masters who could put a rubber boot on a low, slow, smokey indirect fire and make you write home to momma about how damn good it was.

pute kisses like a man: PallMall: barbacoa = barbecue.they're cognates. that was all that my point was supposed to make. in the south, people have taken a dogmatic and very limiting approach to barbecue.personally, I prefer to broaden my culinary horizons as opposed to limit them. these bbq arguments always tick me off, because it's too much about style and never about substance.to me, bbq is cooking dead things with fire/smoke. every region has a special way of doing it. if someone were to say their favorites, I'd be happy, but instead it's a long debacle about how everyone else is wrong.my only standard is taste. history is only helpful if it tastes better.

At both places, if you aren't there by 9am you will walk away empty handed. Black's was a bit of a surprise b/c in my opinion, it's the *third* best place in Lockhart, TX behind Smitty's and Kruez. My list for central Texas is:1) Franklin (by a wide margin)2) Kruez3) The Salt Lick4) Smitty's5) Lambert's6) Rudy's (a bit gimmicky but still decent)7) Black's8) County LineI haven't been to Snow's or J. Mueller but I've heard great things about both.
