I recently tried some aged Brick cheese.
Smelled like rotting gym socks but melted on my burger was AWESOME!
I have some 10 year old aged sharp cheddar that I save.

even the President's Choice 5 year old Cheddar I bought has the beginning of crystals,
which i understand are fairly rare for a 5 year old cheese.

40 years i can't image what the difference would be over such time.

Recently I bought some really aged, funky cheddar. I really enjoy old cheddar but this cheddar was far too old for me. It think it was old enough to be my father. I'll stick to 3 or younger.

I got the family some award winning cheddar from 1990 for Christmas last year. I think it was about $60/lb. Damn that was some sharp stuff, and it had some crystallizing stuff going on, giving it some crunch. I mean, this stuff was so sharp that when you bit in it bit you right back, seriously intense flavors.

Hoping to get my hands on some of this stuff. Sounds like an experience.

And that reminds me... My Vertical Epic drunkfest is coming up in a few months, over a decade in the waiting. Got 'em all, 02 thru 11. Can't wait to see what the 04 turned out like. That stuff was amazing when it came out.

I would love to try some. Aged cheddar is my weakness, but I've never had anything remotely like that.

Some friends with relatives in Sheboygan head up north once a year or so. I send a couple hundred bucks with them and they bring me various meats and cheeses from the specialty shops. Haven't been to Wisconsin in over 20 years. :(

The article doesn't actually say the store failed, just that it was closing down. The owner is 73. My guess is his kids didn't go into the family business, and no one was interested in buying the shop, and he's looking to retire. Its in a town of less than 5000 people 30 miles north of Green Bay.

This is exactly what I was thinking. That's a very, very long time for something to be "overlooked" in a commercial refrigerator. Can the owner of this cheese shop guarantee that they haven't lost power for a day or two in the last 40 years? The cooler has never had any unexpected breakdowns in 40 years considering nobody has cleaned or inspected it in that time?

It's not that bad. It's 449$ here in Quebekistan, so half that in the States probably. Never tried it though, but I do like the 12, 15, 17 and 21 year old Glenfarclas. Got a bottle of each.

Over a decade ago I worked for a temp agency one summer in Sheboygan County, and I spent *one day* working at a factory where they transformed old cheese into catfish bait.

My job was to sort through the blocks of cheese coming down the conveyor belt and pull out any remaining plastic or metal securing bands before they had a chance to damage the liquifying machine.

I saw blocks of Sargento and Sartori cheeses with dates going back almost 20 years.

Although I breathed through my mouth for the entire shift and wore surgical gloves while I picked, I smelled the horrors of rotten cheese on my skin and in my hair for three days thereafter. I had to throw away my shoes due to the impossible stench.

I've smelled some horrific things in my life - month old dead sheep carcass, weeks' worth of dog crap, foreclosed home refrigerator molds, and more - and none of them holds a candle to the fetid rot I endured that day.

Amazingly, I still can manage to enjoy cheese now, but there is no way on earth I would come within 50 yards of 40-year-old cheese. Thank you, no.

I'll stick to 12 year old scotch.
