You want to soak the preserved turnips for a little bit in some clean water. It'll be hella salty otherwise.

Making an omelet with it is a pretty good idea. When I was growing up (chinese household), turnips with eggs and chives were a staple of a healthy breakfast. You can also dice up some pork chops and make a stir fry with it. Little salt, pepper, soy sauce, and it's good.
