Not exactly sure why you'd put up raw horse against butter for flavor. Raw meat, especially horse and venison, is gamey. To serve raw meat properly, you can usually "burn" it with seasoning, like the Ethiopians do. Otherwise you're eating flesh against the ticking time clock of decomposition.

And I'm fairly certain your picture is of a Kobe Beef publicity shot from Japan.

I'm not sure why you WOULDN'T.

Butter is just a lipid. Marbled meat is chock full of lipids. Good raw meat with plenty of fat melts in your mouth like butter, only it tastes better. And no deep fried taters to get in the way of raw Ecstasy of delicious sushi, even if said sushi doesn't have rice or come from a fish.

My fattening recipe of the moment :

- With a frying pan, cook dices of bacon in two table spoons of goose or duck fat (goose fat is better), until the bacon becomes white/grey
- Add sliced potatoes and shredded garlic
- Cover the frying pan so as to keep moisture, and stir frequently so that it does not stick to the bottom.
- When the potatoes are cooked (they should be brown, now), generously add shredded parley

It's now ready to eat.

These seem similar to potato dumplings, or any number of similar recipes worldwide, only cube shaped.

Nothing new, although I agree they are good. You can also crumble up bacon in 'em. If you don't care about them remaining cube shaped there's no need to freeze for hours.

a former coworker and friend married into a puerto rican family, his mother in law used to bring something to work functions that were kind of like fried mashed potato dumplings with bits of sausage. They were awesome. Anyone here know what they are called? Just so I can order them on a menu somewhere.
