Good luck! Hope you do great, but keep in mind that a lot of those contests are poorly run by people who only think they can judge. (e.g. I once got tasting notes back that were EXACTLY opposite, both completely unrelated to my beer... found out from an inside source later that the judges were drunk and had mixed at least some of the beers up). Do it for fun, but don't get bummed if you don't win!

Over time, I've found truly-blinded tasting with beer-knowledgeable friends to be more fun and educational... but that may just be me....

It's just as described.....
Here's the rub.....
They take it and after they cut it off...they flame sear it to burn off all the hair. Then next they have to let it rest. That lets the juices settle in it except the part where they sever it from the head. that part is stitched up so you don't lose any of the moisture. After about half a day, they can then fillet the grey skin off of that and then they marinate the meat.
That goes in a marinade of soy, beer, ginger root, cloves, cardamom, grains of paradise, and various local ground dung. It then marinates a week. Like the possum thread, this is oily and tough until it sits.
After that it is drained and then rubbed with roobis leaf and then they use the kava kava root as a base for the bread that it goes on. Finally after they are ready, it is ground up and mixed with local foul, which is again ground up and then mixed with the local spices, the ground dung used as the original dry rub and then the whole thing is stuffed in sheep,pig or cattle intestines (or the elephant intestine if they have any left over from the hunt) and then it is cooked. Finally it is served with a sauce made of the congealed blood of the various animals used for the meal, mixed with milk, as is the Masai tradition, and then spread over the thin slices of ear. (Like ketchup to us) the hard part is portioning the delicacy on to a bun from the kava kava root starch that is mixed with ground hooves (like a flour) to hold the elephant ear. Once you get that sliced and on the bread, (with the appropriate condiment) then it is a snack as large as a dinner plate and that's just ONE serving. One ear usually serves about 20-25 people.
It's amazingly filling and tasty but doesn't last. Because you only get 2 ears per elephant, it's hard to get them to the fairs and if you get the smaller baby elephants, the intestine is much smaller so you have to use a few slices to fill the bread not to mention that you maybe can get 10 to 12 sandwiches from one ear. (If that..the really little ones just aren't that meaty and as opposed to veal really tough cause it's all skin on no meat.)

Loaf of curly fries... and by loaf I mean as big as a loaf of bread in the store. They mechanically, spiraly cut large potatoes in front of your eyes and then place as much as they can into a basket the size of a loaf of bread then deep fry. When done they plop the whole contents of the basket on a plate and serve. Yum Yum!

There's a restaurant here, and amazingly not on the southside, that serves only fair-themed food. Can't remember the name but the employees there are too clean. Have to make do with truck stops until the fair in September.

I'm a health nut - one of those people under 20BMI who thinks that fair food is mostly a travesty, horrible fat blight wielded upon the population of an unsuspecting city...

That said...

There's this one stand at the fair that I got into before my healthy eating habits got started. It's been there every year since I found out about it 7 years ago. This place makes pretzels... awesome, huge, doughy pretzels... with garlic butter and cheese...

I have a lingering memory of being a young'n at the Ohio State Fair back in the 70s and eating corn on the cob.
Big deal right? Oh, wrong. They took the corn out of it's little steamer and DUNKED IT IN MELTED BUTTER!!!
It was almost 30% butter going down.
Sharts for two days after that.

I don't go to fairs, which is to say, I tend to avoid hot, sun-baked, oversized parking lots where carnies whose hands have been *shudder* I can't imagine, are preparing food that, even in the best of circumstances, is extremely unhealthy. Kind of like Fry eating a hot dog from a vending machine in a toilet.

I'm a freak at the fair. Everyone else is stuffing their maws, but I can't do it. Whenever I am hot and walking a lot, my appetite goes out the window. If we stay after dark, I like to share a strawberry-covered funnel cake with someone though.

4 weeks until I get to indulge in my favorite fair food: Fire roasted corn on the cob....they dip it in melted butter, and you can shake almost any topping on it: I go for the parmensan cheese and cracked pepper.

//Don't know what they do to it...I've tried it on my grill, and it fails miserably.

All right, fine. I will endeavor to find a fair and an exemplar. Though I may be a bit afraid. Of course the last thing even resembling a fair I attended had endless free samples of beer and bourbon. EVERYTHING else sucks compared to endless free beer and bourbon.

Also, a round of applause for Mr. ChipNASA, but mobile replying sucks and I didn't want to 2x the wallotext.
