Wine aging does not work that way either -- from TFA: "wine, in which yeast continues fermenting in the bottle..."

If that's the case, wine bottles would have the corks popping out due to secondary fermentation. And that does happen (ever get a bottle where the wine was fizzy, even when the wine type was supposed to be entirely still -- like a fizzy Cabernet? That's what happened), but we call it a fault, not aging.

When my great grandfather died we found a small bottle of scotch hidden in a closet. The bottle didn't have an age or a date on the label, but my grandmother thought he had quit drinking when she was born (in the late 30's). We drank it. It tasted like an ashtray.

Prohibition era? The stuff was crap. There's a reason people started drowning it in Orange Juice- the only thing it had going for it was that it was alcoholic and available. The rums would have been okay, and some Canadian Whiskeys, but just about everything else was worse than rotgut.

But interesting because it's pre-prohibition, which did shift palettes and recipes. For one, it basically killed rye, which is only now starting to regain popularity. Pre prohibition, it was far more popular than Bourbon.

I restored a 100 year old house several years ago and pulled up the attic floor to install insulation and all I found was 80 year old clothing that someone had stuffed between the rafters for primitive insulation. I did find some nifty old packing house saws and knives in the basement.

No.. I've tasted a good smokey scotch. This was bad. Have you ever drank a sip from a beer that someone flicked a cigarette ash? It was kind of like that but way more intense.

Also, I was wrong about the age. The bottle said 8 years.

Sorry, but I still don't believe you. Enough people absolutely hate intensely smoky scotch and liken it to licking an ashtray (I'm pretty sure I've heard that exact phrase), or the inside of a chimney, that unless you can tell me what smokey scotch you tried (there are differences- you may have had a highland that was sweet and smoky, while that may have been a very dry and smoky style), and it's a legitimate dry, smoky and peaty whisky, I'm more inclined to believe that you just had a different taste in scotch. You also say "tasted" smoky scotch, which makes it sound like you didn't much like it, and haven't had much variety in the area. As somebody who loves smoky scotches, I'm not gonna trust the palette of somebody who doesn't like the stuff in judging if it's any good or not.

I've had some fairly old spirits before. Granted, probably only about 2 decades old, but they were half open bottles. The bitters might go all the way back to the 60s, and those are still around (at my parent's place, and I'm the only one who ever touches them). When they're gone I'm refilling the bottle- Angostura bitters, and they're exactly the same. Benedictine was exactly the same (though it used to be bottled at a higher strength than it is now), and there were a few other spirits, including some Cognac that still tasted great.

Generally speaking, if it doesn't oxidize too much, spirits are very stable. And if it does oxidize some, if the bottle is kept closed, it only goes so far before the reaction stabilizes and doesn't go any further.

You may be right and the scotch was bad, but I haven't really been convinced that it's not just a difference in tastes.
