We can. There are wild truffles from California to BC, on the west of the mountains, and there are populations in "...Texas, Colorado, Michigan, Tennessee and at higher elevations in New England..."

There is even a truffle nursery in North Carolina.

You might have truffles growing in your yard and not even know it.

Hard to believe there's no way to raise good truffles in a controlled environment. For $3600/pound, you'd think somebody would be working on that.

I suspect it wouldn't be the same. Truffle ....ish, but still not the same. To some, there is a difference.

Very, very strong, rich and perfumey.
You use it sparingly to flavour stuff. Italian truffled ham is a wonderful thing. A few shavings in a pasta sauce are divine.

That said - total ripoff. Also notice how Urbani are trying the DeBeers gambit - only our stuff is the real stuff, all those others are inferior, you can't manufacture this or grow it yourself, so stop trying, no, don't look over there at the guy with the truffle farm! He doesn't have 'real' truffles! That's just not natural! He didn't even have to use a dog!

Australia now produces significant quantities of truffles, enough to hit the market price, these guys are just trying to shore theirs up with mystique. All you need to start truffle farming is oak seedlings with roots that have been exposed to truffle spores, and patience.

Truffle farms are possible, but two world wars took their toll on French truffle production.

As a former high-end chef who used them quite a bit...I agree 100%. Fantastic flavor, but waaaaaaaaaaaay too expensive.

One of the favorite ways we used them at one place-we'd make a champagne/white vermouth cream sauce, served tossed with fresh linguini, that we'd grate fresh white truffle over. Coulda eaten a quart of that!

/$28, appetizer portion, in 1983. Cost most of what our entrees cost at the time and we'd sell out whenever we ran it.

It's rich people stuff. It's not supposed to make sense.

I bet there are people growing equivalents right now in captivity, but there's a placebo effect similar to mislabeled wines.

Truffles will eventually be peasant food (presumably they began that way) and the rich will move onto something more obscure.
