Salmon are predators, and like pedos they prefer young prey and smaller fish. The mercury builds up. AFAIK it really don't matter if the water is fresh or salt, although I would guess more mercury in the sea because of all the combined run off. Still lots of mercury in addition to what is already there naturally. Mostly from our coal. I would think mercury would be high in areas with active coal use, mining and mining for precious metals. Gold mining makes use of mercury and this is becoming a concern.

Phõ Tai is wonderful. But any other variation on the meat involves seriously mystery meat. And the beefballs cause the smelliest farts ever. Stay with Phô Tai and you'll get good brisket, that includes in the real Vietnam.

I'll just leave the official 2011-2012 Michigan Fish Advisory here and note that only freshwater fish are listed. Mercury, PCBs, Dioxins, and more. Yummy!

@hamfast, after a night on the lash, nothing better and if you've got to do a full days grind...obviously not everyday, it takes about a week for your arteries to regain equilibrium but every once in a while it's a plate sent down by the food gods ;)
