This is also incorrect for different varieties of steak. Sure, it'll work for ribeyes and some strip loin, but chucks? Round? Tenderloin? Buffalo cuts? Sirloin? Skirt and flank?

Say what? Are you cooking a steak or a roast?

Take 1.25in steak out of fridge to bring up to room temp
Build fire
Spread coals and cover(fully vented) for 4-5min
Brush grill grate
Place steaks on grill for 4.5min covered
Flip steak and cook for another 3.5min for med-rare. (Adjust cook times slightly for thicker steaks)
Remove from heat and cover with foil to rest for 6-7min.
Eat.

Get the grill up to about 250 deg C on the cool bits, slap on the cow for 5 and flip it 5 later. Serve with some nice Shiraz. A 1991 Hunter Valley is good if you can find one that isn't past it peak. And add veggies or potatoes or something.

i live in omaha. nobody here buys omaha steaks. costco or whole foods ftw!

here's what you do:

• start with a decently marbled steak at least 1" thick, preferably 1.5"
• bring it to room temp or just below
• season it with salt & pepper
• sear it on a very hot grill so the outside is nice and dark brown (the maillard reaction)
• don't turn it too often (at least 3 mins a side, depending on grill heat and thickness of the steak)
• remove it from the grill when the internal temp reaches 115º
• let it rest for 10 minutes under tented foil

EAT the motherfarker

addendum: anyone who eats a steak that's more done than medium rare is a farking moron who should be shot in front of his family.

You misspelled "INCLUDING" beef is at the upper bound of salt levels to deal with the other flavorous. If you want salt, there is a salt shaker on the table.

I'm going to assume you don't know what "Blair's 1am" is. its not a steak sauce an any traditional sense and is only suitable for people who like "hot" cranked up enough to kill the nieve. And there is 2am and 3am... but the 1am works well with beef.

Stick that sucker in a plastic vacuum sealed bag, leave in a water bath at 130 degrees for an hour and then do a very quick sear to give it a nice crust. It doesn't get any better.

Growing up, my family would often go out to dinner with our neighbors. Jim, who was my Dad's friend and around his age, loved his steaks as rare as can be. Every time he was asked how he wanted it cooked, he would say "just walk a cow through a warm kitchen."

I didn't understand it until I was a bit older of course, and even though I like my steak medium rare/medium, I try to shoehorn that line into most every dinner conversation I can. It's f'kn hilarious.

I'd just like to add that if you need to use the Omaha Steak iPhone app to enhance your grilling technique you are better off using that phone to make a reservation at a nice steak house.

1) Get whatever cut of steak you prefer.
2) Pre-cook prep it whoever you like.
3) Cook it however you like, on whatever sort of cooking apparatus you prefer.
4) Enjoy your perfect steak (Don't forget that your dog wants some).

Pffft. no I'm not doing it wrong, and the guy who owns a company that sells frozen mushy ungraded beef isn't likely to improve my technique either.

He forgot step #1: Buy prime beef at your local butcher or at least costco where it wasnt frozen, was actually graded by the usda, and actually tastes good. You won't get ripped off by the sky high prices for the bundled hotdogs and hash browns either.

I used to be big into marinades ( for tri-tips and bigger cuts) but lately I've just given everything the same attention:

Salt
Pepper
Cayenne
A little chili powder
A little paprika

Oh, and dont rub olive oil on your steak either. Oil the grill with a high temperature vegetable oil, lard, bacon fat, duck fat or clarified butter. You do not use oil on the meat for any reason, nor should you heat olive oil in any application. At the type of heat you'll be using, olive oil has too low of a smoke point and tastes nasty when burned.

we used to do that for carne asada, beer, cilantro, lime, and jalapenos.....
