One of those oldschool....crap...I don't know what its made out of, pyrex probably....bowls that everyones grandmother had.

Our set is inherited from my parents. They are this weird yellow.

You don't need copper, just a regular old stainless steel mixing bowl, very clean and preferably chilled.
The bowl you used is porous, and likely holds residual oils in the pores, which emulsifies the whipping cream before it ever whips.
Does that make sense?
