Aside from games, wifi browsing, and music - won't the owner deactivate the plan and report it stolen? Point is would ATT or Verizon happily take a credit card for something they was stolen?

Lost Thought 00: Getting your phone stolen totally makes up for you being a murderer

It was a traffic accident, not a capital offense. Besides, nobody died. The nun only had minor injuries.

Pretty much... a local chain of phone stores where I live has been robbed at gunpoint about 5 or 6 times now, always targetting iPhones. Seemed really stupid to me, since the phones are all traceable, but I assume the criminals just sell the phones off for a little bit of cash or drugs and dont really care much about the end result.

I think the providers can only remotely track the sim card, not the phone itself. So, slip in the sim you got from your POS phone that's already on an AT&T plan, upgrade to iPhone service (You probably couldn't do this right away) and poof, you just saved $400.

They can, they just haven't been bothered to until recently (which the link you posted says.) Of course they didn't care to because stolen phones lead to new phone sales.

Yes the SIM card has data but each phone has an equivalent of a MAC address for the entire system to work. I suppose some people won't deactivate their plans until it gets shut off for lack of payment, but they would hopefully be few and far between.
