Ok, so I need to start with Pork Tendloin not boneless Pork Loin. Butterfly the whole loin and cut to 4-6 ounce pieces and hammer it out till it reaches about 12" diameter or less than 3/16" thick. Use a standard breading process, except substituting crushed saline crackers for the bread crumbs (seasoning, or no?). Or go for the double battering since it's so thin?? Fry 1.5-2minutes per side in canola or peanut oil. Hold in a warm oven (if necessary) and serve on a plain hamburger bun with mayo, mustard and pickle chips.

Do I got it, or do I really need to try the soak in buttermilk overnight thing also?
