There is a momma with about 30 eggs under the bushes in my front yard right now... or maybe they hatched. The kids feed them, those ugly ass ducks are in the yard every day... but they don't bother anybody.

Nah, they're apparently good to eat. Until a federal law passed protecting them in 2010, they weren't a problem in Florida, because trappers would come in and offer to get rid of them for you for free. The trappers, in turn, were selling them to restaurants, which were serving them on the menus as a delicacy. Since the restaurants knew how to cook them pretty well, they were pretty good. Everybody was, more or less, happy.


So you're saying that I may have been lied to by someone that didn't want me eating the tasty, tasty ducks? For the last 35 years? Dammit!

Actually I kinda wouldn't mind making this law for all animals invasive native or otherwise Capture and rerelease is Verboten. You can kill it humanely or you can STFU about it but no re releasing it into someone elses back yard.

Free, tasty duck eggs and ducks.

Throw some corn in a havahart trap and you can get out the roasting pan.
The wax method is best for cleaning the feathers.

Muscovy Ducks are native to the New World. Their range in Mexico expanded until it hit Texas. At that point the federal government considered them native to the United States.

I didn't know pigeons were protected. I thought pigeons, starlings, and (house) sparrows were the big three unprotected species.

In the US, Muscovy Ducks are considered an invasive species. An owner may raise them for food production only (not for hunting). Similarly, if the ducks have no owner, 50CFR Part 21 allows the removal or destruction of the Muscovy ducks, their eggs and nests anywhere in the United States outside of Hidalgo, Starr, and Zapata counties in Texas where they are considered indigenous.

Awesome duck recipe from ex Red Sox pitcher Jonathan Papelbon. Make it all the time.

"What I do," Papelbon said, "you marinate it in Coke and Italian dressing, right. What the Coke does, the carbonation takes out all the game flavor. So you marinate it in Coke and Italian dressing in a Ziploc bag. Then what you do, you slice up a breast, quarter it in fours, and then you wrap those four little nuggets in bacon, jalapeno, and sour cream, so you wrap it all in a piece of bacon, throw it on a grill. It's amazing."

Trust me, nice smoky flavor plus a little heat then cream cheese to cool it off. Only drawback is biting into a steel pellet and breaking a molar in half, costing me $400 for a crown.

Any duck that feeds on fish & other amphibians will taste like crap. The Muscovy is one of these. The best thing to do is use them for pig feed. They are of Mexican/South American origin. Thanks NAFTA.

I'm not sure why they make such a big deal about people not being able to kill them humanely. It's really easy: lay a strong stiff pole across their neck and then jump on it. Quick and painless.

Make sure you cut the throat and drain the blood immediately if you're going to eat it. Start plucking the feathers right away too because you want to do it while it's still warm.

Maybe "jump" isn't the best word. I should clarify that you want to stamp the pole quickly and sharply with your foot.

There is an easy solution to this that others have mentioned - eat them. You may have to borrow some of Cali's Asian population to get their numbers down, but dang, can they ever cook duck! Just make sure when you send 'em back to us, you let them bring a few ducks back for tasting testing purposes.

Crispy Deep Fried Duck

1.5 kg Duckling
1 tablespoon Salt
2 slices Ginger root, crushed
2 cloves Garlic, crushed
2 Spring onions (scallions), cut into short length
3 tablespoons Rice wine or dry sherry
2 teaspoons Five-spice powder
1 teaspoon Szechwan peppercorns
Oil for deep-frying
6 tablespoons Hoisin sauce
4 Spring onions (scallions), cut into thin strips

Clean the duck well and rub with salt inside and out. Place it in a deep dish, add ginger root, garlic, onions, rice wine or sherry, five-spice powder and Szechwan peppercorns. Steam vigorously for at least 2 1/2 hours, remove and discard the ginger root, garlic, onions and Szechwan peppercorns. Turn the duck over and let it marinate in the juice. After about 2-3 hours, take it out to cool until the skin is dry. Heat up the oil and deep-fry the duck until golden and crispy.

To serve, either leave it whole or split it in half lengthways. It is eaten like Peking duck, wrapped in Chinese pancakes or steamed buns with strips of onion and hoisin sauce.

This is the recipe I found that comes closest to how a place in South Sac makes theirs. It is DELICIOUS. Since South Sac is so far from my house I started experimenting with making my own from various recipes I found online. I like this one best.

Either way, they are everywhere here, it seems every housing development put in a central pond. They shait everywhere, and won't move out of the road even when nudged with a car. My Red Ryder BB gun gets them scooting however, but that is harder to hide from the driver's window.

That's something I didn't understand from the article so any help would be appreciated. According to the article, you can still trap and kill them, you just can't trap them and let them go where there might be real (indigenous) ducks. If that's the case, why did the food trapper industry collapse (or at least raise the price to a ridiculous amount per duck) after the new law? Clearly there's something the article is not addressing.

I just wanted to say I had a female Muscovy as a pet in suburban North Carolina. She was extremely smart, never failed to greet me by bobbing her head and cooing like a dove, and would follow me around affectionately. She was also very gentle.

/They're not all awful :) I think just the males are aggressive...

I lived in an apartment complex in Weston where we had duck ponds. The ducks swam and played during the day, and they slept in the grass along the banks in the evening. Sure, there was occasionally some duck poo on the sidewalks, but you learned to just dodge it. The ducks actually added a bit of charm to the place.

South Florida Muscovy Duck CSS:

A gang of these ducks cornered me as I got out of my car one afternoon, and followed me to the stairs at my apartment building. They then proceeded to track me from the 1st floor as I walked to my apartment on the 2nd floor. When I went outside a few minutes later to see if they were still around, they were huddled below my balcony, staring up at me. It was... unsettling.
