Ugh, now I'm in the mood for braunschweiger or liverwurst. I always thought it was just a brand of liverwurst, not a type of liver sausage. I love it, but it dos not always love me back. Cheaper than pate, and so much more flavorful.

Almost exactly what I came here to say.

Braunschweiger on dark rye, serious mustard and coarse chopped onions. Not something I'd eat every day. But now and then it's beyond fantastic. I just realized that it has been way too long since I've had it.

With some good cheese and some good bread/crackers, this is pretty tasty... Works well with any alcoholic beverage.

SpiderQueenDemon: Braunschweiger is good, but only with a lavish spreading of brown mustard, the good hot kind, and on toasted bread with perhaps just a bit of cheese. Granny used to make us sandwiches that way and she'd just heat them a little in a skillet with the tiniest amount of butter. When her arthritis got too bad for her to lift up her cast-iron, we got her a George Foreman grill and it works just as well.

She always serves them with German potato salad on the side, real bacon crumbles on top of it, plus a whole dill pickle as big around as the drive shaft on a '76 Ford.

Granny's German potato salad:

3 pounds of yellow or red potatoes
Big handful of bacon
2 1/2 cups chicken broth
1/4 cup white wine vinegar
1 cup onions, diced
Salt to taste
A bit of cracked black pepper
2 tablespoons hot brown mustard
A little handful, like enough to just fill your palm, of chopped wild onions and chives from the garden

What you do is boil the potatoes in water with a little salt while you're simmering everything else but the wild onions, chives and the bacon in a separate pot. Cook the bacon, either in a skillet or one of those microwave thingies. (Arthritis is a biatch.) Once the spuds are cooked, chop 'em up, stir the bacon AND the fat in with them, then pour the hot broth and spices over them, then throw on some MORE bacon as you fill each plate.


A potato salad that doesn't involve mayo or some mayo-like substance? I love your grandmother, the sammich sounds dee-lish as well....

I have a friend who brought a 4' long braunschweiger to our drunken campsite one year. It was devoured. I have made many references to braunschweiger in jest ever since.

Roook: Is this anything like liverwurst. I grew up on liverwurst sandwiches on white bread with mayonnaise. Yes we were Mormon. Why do you ask?

That's how I grew up eating them. When I was a kid I slathered mayo on everything though. May have to try the rye/mustard combo.

When my oldest was 10, he loved braunschweiger sandwiches...until he took it to school. Took forever to get him to eat it again after they made fun of his cat food sandwich.

If you want to try an easy and yummy cracker spread, mix equal amounts by weight of braunschweiger and cream cheese. Chopped onions are optional, but I always add them.

Let both ingredients come up to room temperature to soften them, then mix until evenly blended. You'll work up a sweat if you don't have sturdy mixer like a Kitchen-Aid. Chill for a while and serve with crackers. Delicious.

Let people try it before you tell them what's in it. People who turn their noses up at the thoughts of eating braunschweiger usually love it, too.

Well thanks fark, I haven't had Braunschweiger in at least 4 years. And yet, later today, I'm going to pick some up. I love/hated the taste of it, the sickly sweet almost putrid but delicious liver taste. It's damn near a challenge to eat it, but it's still tasty for some reason. It's like un sweetened choclate. It tastes sour at first, then tastes good, then tastes sour, then tastes good, then tastes like crap. But a few hours later you still taste it in your mouth, and it tastes good. Bastards.

I just got back from grocery shopping a few hours ago and bought some braunshchweiger for the first time in several years.

Got on Fark and this headline was at the top of the page.



Same here. I haven't had it in a while and had a big craving for some braunschweiger. I like mine simple. Braunschweiger, potato bread, a light spread of a stone ground mustard.


Top it off with some extra extra sharp cheddar cheese and it would be perfect. In fact, I think I will walk next door to Wegmans and get me some BW. The lunch menu has just been set.

Braunschweiger
Cream cheese
1 med onion chopped
2 hard boiled eggs

Mash it all together with a potato masher

Serve with party rye

A staple at every family party
