I've been to Braunschweig a few times and I have never come across this before. Maybe my friends there were trying to protect me from it. Might also explain why they moved to Hannover.

Oh, it exists. At least up in Michigan where Koegel's is present. It is an amazing product. I'm actually not much of a fan of pickled goods, but I grew up with pickled bologna and with some crackers and cheese, it's a delightful snack. And yes, I'm fat.

Braunschweiger is good, but only with a lavish spreading of brown mustard, the good hot kind, and on toasted bread with perhaps just a bit of cheese. Granny used to make us sandwiches that way and she'd just heat them a little in a skillet with the tiniest amount of butter. When her arthritis got too bad for her to lift up her cast-iron, we got her a George Foreman grill and it works just as well.

She always serves them with German potato salad on the side, real bacon crumbles on top of it, plus a whole dill pickle as big around as the drive shaft on a '76 Ford.

Granny's German potato salad:

3 pounds of yellow or red potatoes
Big handful of bacon
2 1/2 cups chicken broth
1/4 cup white wine vinegar
1 cup onions, diced
Salt to taste
A bit of cracked black pepper
2 tablespoons hot brown mustard
A little handful, like enough to just fill your palm, of chopped wild onions and chives from the garden

What you do is boil the potatoes in water with a little salt while you're simmering everything else but the wild onions, chives and the bacon in a separate pot. Cook the bacon, either in a skillet or one of those microwave thingies. (Arthritis is a biatch.) Once the spuds are cooked, chop 'em up, stir the bacon AND the fat in with them, then pour the hot broth and spices over them, then throw on some MORE bacon as you fill each plate.

No, seriously...I always thought it was a staple of non-bologna luncheon meats along with pimento loaf and the dreaded souse. I honestly didn't know there were places in the US that DIDN'T sell it as luncheon meat O_o

I also have heard of pickled bologna--hell, I've had pickled bologna. Not too bad stuff. Same companies around here make braunschweiger and pickled bologna in jars (Fischer's seems to be the big one around here, though Boar's Head also makes braunschweiger)...

/then again, I also live in a part of the country where it's not uncommon to see jowl bacon, pickled eggs, and pickled pig's feet in the meat and deli section...maybe Kentucky is just weird or has a surprising number of folks of German ancestry living along the Ohio River

Yes, its considered a type of liverwurst, but depending on varieties you are comparing it has somewhere between 2x-4x the amount of liver in it. Most liverwurst is 10-20 %, Braunschweiger in the US is required to be at least 30% by the USDA, and is typically 40%. Also, it's usually in a natural casing and is almost always smoked.

/ I never convinced myself to try it, but my Dad is fan.

I too dislike liver but love Braunschweiger. The taste of liver is ok, I just can't get past the texture.

Same here. I haven't had it in a while and had a big craving for some braunschweiger. I like mine simple. Braunschweiger, potato bread, a light spread of a stone ground mustard.

I know, it's farked up. I used to almost vomit when my dad would eat liver and onions, but Braunschweiger on crackers was just heaven. IT MAKES NO SENSE!

Came here to say this, but specify that they should be red onions, and the rye should be toasted. Plus a slice of some sharp cheddar.


I understand people who enjoy red onions even less than I understand people who enjoy onions in general.

I wish! I don't have any. I'm thinking seeded rye. It's some made by that ex con Dave guy. I haven't tried it yet but it smells great.
