Well, its grilled cheese month, not emulsified milk protien concentrate with limited cheese content sandwich month.

I prefer sharp cheddar or gruyere on a good crusty bread. My son likes Parmesan, Colby-Jack and Provolone... all in the same sandwich.

I tend to do a Tillamook Cheddar with pickles and bacon on thick french bread.

Putting ketchup on a grilled cheese sandwich? There should be an amendment to the constitution that allows shooting on sight if found doing so.

For slices, get a wire cheese slicer:

You can make short work of slicing up an entire block without any danger.

For chunking cheese up for a sauce or auderbs, use a broad-bladed chef's knife with a sturdy, thick handle. That gives you the most control of any knife... Just remember to keep your fingertips folded under your knuckles, and you can guide the flat of the knife with your knuckles without fear of lopping your fingertips. Or you can push straight down with the flat of your hand on the back of the knife.

Have you tried a wire cutter? They do the job pretty well, and with a degree of safety that a late-night wander into the kitchen after a night of drinking can't ruin.

my recipe:

sourdough bread
extra sharp cheddar
provolone
thinly sliced onions
dash salt/cracked pepper
grill in olive oil with hint of garlic

For a grilled cheese sandwhich the bread needs heavy consideration too. Wonderbread isn't going to cut it.

I like sourdough for mine. Except the last loaf I bought had a bubble clear through so each slice has a huge hole. Not so good for melty sandwhiches.

Well, yes, that's the Caprisian. Makes a nice salad, too - tomato slices covered in mozzarella slices, topped with whole basil leaves and drizzled in olive oil.

I'm firmly in the camp of 'I know it's processed and not real cheese', but American cheese is the one I keep in my fridge for emergency grilled cheese cravings. For one thing, it just doesn't go off, or at least it would take months and months longer than it ever lasts in my house. Even the cheddar occasionally gets some mold if we forget we have it.

I'm sure all the added ingredients are lovely, but once they're in there, can you really call it a grilled cheese? I'm a big fan of a ham & Swiss sandwich 'melt' or grilled, but I don't mistake that for a grilled cheese. I must say some of the best grilled sandwiches I've ever had involved dill Havarti, maple smoked ham, and my sister's spelt something-grain bread that had to be eaten before it got moldy when she was in the hospital.

(Side note, cheddar region purists, do you biatch about champagne that doesn't come from Champagne, too? Vermont and NY both put out some absolutely excellent cheddar cheeses. Complain all you want, I'm not paying import prices when I can get the good stuff right at Wegmans).

Thinly sliced Pink Lady or Granny Smith apples, the sharpest white cheddar, thin provolone and fresh cracked black pepper grilled on sourdough bread. By far my favorite grilled cheese.

You've never stuffed a baguette with brie and left it in a low oven for 30 minutes? Got me through grad school with the normal 15 pound gain, but delicious.

I'm a purist though. The bread has to be wholegrain and toasted in advance, then you broil some cheddar on top. Got me through grade school. No frying or use of processed cheese product involved.

Made a great closed grilled cheese sanger (to use the Australian abbrev.) yesterday. The wife's home-made corned beef (thick cut) with cheddar and fresh chilli slices. Will be making another tonight.

We've found that pretty well any savoury item can be improved by putting it in a grilled sandwich with cheese and chilli.

Cheeseburger made with brie cheese and caramelized onions, served on a kaiser roll. Used to get them at the Berkshire Grill before they closed. Miss them so much.

For a great hangover breakfast, grill some bacon, put it in a croissant, cover with cheese (cheddar, gruyere or stilton are personal faves) and then put under the grill to melt. Rich but delicious.

I like Velveeta for q&d grilled cheeses, and it also works well if you mix it with
other more flavourful cheeses as a binding agent and melting catalyst.

I never liked whole tomatos until I had caprese salad. Now I seek it out, all
because of the mozzarella (and fresh mozz. makes it even more divine).

you're at least the 2nd person in this thread to misread what pony killer said. pony killer said list fails because it DOES include american.

however, no, it does indeed NOT fail, as american "cheese", is the traditional grilled cheese ingredient for many millions of people. and just because it's "processed" or a "cheese food" doesn't mean it's bad...it's just because the way it's made it can't legally be called "cheese", but it is essentially the same combination of ingredients as most other cheese.
